Homemade Mac and Cheese

Made this last night and it was great! Mac n cheese is always something I manage to screw up but this was an excellent recipe for me to follow. I followed it pretty much exactly except I did add some spices - paprika, ground mustard, onion powder and garlic powder. And for a twist, crumbled some bacon on top. It was great!

Italian Chicken Skillet

This recipe is awesome! So easy and delicious. I had some extra time so I roasted a few cloves of garlic first and smashed them before stirring in with the chicken. I also added some zucchini. Finally, I wanted a tad more liquid so I added more wine and chicken broth. It was so good my husband asked me to make it again tonight. Thanks for the great recipe!!

Soft Sugar Cookies III

These were nice, light, cake like cookies, just as described! I did add a touch of vanilla extract. My husband described them as simple but good. I agree!

Raspberry Coconut Cookies

I really liked this recipe! I think next time I will flatten out the cookies a little more so they are thinner and easier to eat. I did not find them to be runny at all - if anything my dough was a little dry. Make sure the cookies cool completely, otherwise, you may have a mess in the middle. Thanks June for the recipe!!

Spicy BBQ Chicken

I've never made my own bbq sauce before but I'm glad I tried this! I only did about half the hot sauce and it was perfect for my taste. Worked perfectly on the grill, will definitely use again-thanks!

Cheese Biscuits I

These were awesome! I added half the butter into the dough, and saved the second half for "basting." I also added a few shakes of garlic powder and parsley, as others had suggested. They were fantastic, wouldn't change a thing!!

Easy Pancakes

I read others' reviews before making and used only 2 teaspoons baking powder, halved the salt, added 1 tsp of vanilla and subbed butter for the oil. They were a little bit flat, but tasted great. Will definitely make again!

Zucchini Herb Casserole

This was good - unfortunately right as I started making it I realized I was out of zucchini! I subbed a squash and half a red pepper. I thought it turned out pretty good - it did need a little heat so next time I will add some red pepper flakes or more garlic to the sauteed veggies. Will definitely make it again!

Baked Honey Mustard Chicken

This was great! I took other reviewers' suggestions and toned down the paprika, but otherwise followed it pretty closely. I sliced 2 my chicken breasts pretty thin and got 3 pieces out of each. Will definitely make again!

Chorizo Stuffed Bell Peppers

I really liked this recipe! I was looking for a way to spice up my stuffed peppers. I used Zataran's dirty rice as a base, and followed the rest of the directions (so I ended up with a LOT of the rice/chorizo mixture left over). The only thing I did differently was remove the foil for the last 5 minutes in the oven to get the cheese a little bit browned. Yum!

Karen's Baked Banana Stuffed French Toast

This was alright. The middle of mine came out very mushy and I questioned whether it was cooked (it was). It was also very hard to flip with the bananas in the center, so next time I might do the filling after the initial cook in the pan. Good start, I could see lots of variations to this recipe.

Orange Drop Cookies IV

Wow these are awesome! Very light and moist!! I can't wait to bring these in to my company's potluck tomorrow. I added some food coloring to the frosting to make it orange for halloween, and added a few chocolate chips (see photo). I, like others, made more frosting (just half). Also I baked on parchment paper which worked out great. Thanks for the recipe!

Chewy Jumbo Chocolate Chip Cookies

Hmm, mine did not turn out chewy at all. They were pretty cakey and not that sweet, either. I halved the recipe since I only had about a cup of chips but that shouldn't have changed anything. Oh well.

French Toast Casserole

This recipe was delicious. However, I did make a few tweaks and made it for 3 servings. I used half sugar/half spenda and added some maple syrup on top before baking. I tasted it about 30 minutes in (and it was done, by the way) and added a bit more and then baked it for an additional 5 minutes. I used a whole grain bread and it soaked all the liquid up! Next time I will add some more milk, maybe some half and half, but mine wasn't soggy at all. Also, like others I added more cinnamon and some nutmeg. Thanks for this great recipe and all the variations!
