Spinach Salad with Peaches and Pecans

E-Z Drop Biscuits

I loved these biscuits, they are better than Bisquick. They are soft, but not heavy. They also keep very well in a sealed plastic bag overnight. I added in some shredded cheese to the recipe and they were the perfect compliment to our minestrone soup!

Bran Muffins III

This was a fine bran recipe! Both kids ate them for breakfast without complaints! I made the following changes: used 1/4 c. molasses instead of measuring out 6 TBSP, added 1/4 c. packed brown sugar, used vanilla soymilk instead of buttermilk, used olive oil instead of butter. My baking time was 17 minutes - these rose very well. Thanks for sharing.

Awesome Baked Sea Scallops

These tasted great! My husband and I ate all 16 scallops by ourselves !!! ha ha! I halved the bread crumb mixture and it was still plenty. I also increased the total baking time to about 20 min. Thanks for sharing this great recipe.

Banana Cake Cookies

I didn't anticipate loving these banana cake cookies, I made them primarily from older bananas and for the kids. They turned out SO great! I doubt there will be any left by tomorrow morning. The only changes I made were to change the nut to a walnut instead of pecan, and I doubled the nuts to 1 cup (pureed them in a high power blender so they wouldn't be too crunchy for the kids). Also, I used 1 cup AP flour and 1 cup whole wheat pastry flour. Edited to say: these did not save well overnight - became soft and VERY sticky, gooey. Better to consume them all the same day!!

Classic Waffles

Very good! I substituted in light soymilk for the "milk" and then used 1 cup whole wheat pastry flour and 1 cup AP flour. They were crispy and perfect!

Thai Green Curry Chicken

Very good! We used seitan stir-fry strips instead of chicken, for a vegetarian substitute. Still too much heat after halfing the green curry paste, but green curry is traditionally a spicy dish!

Great Grandma's Pork and Sauerkraut

I used tofu instead of pork, and I thought it tasted great. Hubby was a little put off by soft applesauce like apples chunks with peel in his sauerkraut dish. I like the idea of adding in some sweet to counter the sauerkraut, so maybe I'll do applesauce instead of apple chunks next time.

Deep Dish Brownies

Maybe I did a wrong combo: I added in the baking powder but I used only 2 eggs, as suggested for fudgier brownies. They were a yummy fudgy in the middle of the dish, but a weird dry & spongy border. They tasted good, though!

Chewy Chocolate Chip Oatmeal Cookies

These turned out very hard, not chewy and soft like I imagined. I didn't use real butter, I wonder if that is the cause. They were not the sweetest cookie, either, although that was a selling point for allowing my toddlers to eat them!

Home Style Macaroni and Cheese

This is a great recipe to have! My only changes were to add slightly more butter and increased the noodles to about 12oz (give or take) to fill up the 2 QT baking dish. Both toddlers and myself had generous portions!! Thanks for the recipe.
