Best Ever Jalapeno Poppers

Reviewed: May 17, 2010
This was great. I didn't have the bacon and I forgot the breadcrumbs which would have helped having a thicker crust for the poppers but overall, it was good. I will make again! Thanks.

Spicy Black Bean Cakes

Reviewed: May 17, 2010
I sauteed some garlic, jalepeno peppers as suggested, then in one bowl, took a half of can of black beans, some garlic and seasonings, along with the egg, some flour and breadcrumbs, mixed it all together and made patties. Once made, I fried in canola oil. It was soo amazing. My mixture generated 3 burgers. One I ate and two I left for dinner and lunch for another day. Thanks for the great recipe. Oh i forgot i added the fat free sour cream but didn't add jalepenos. I was too fast for myself. These are sooo good. Since I didn't have the yam, i skipped adding that. Will try that on the next go around.

My Crab Cakes

Reviewed: May 2, 2010
these were simple to make and yummy. I changed a few seasoning choices -- added basil, garlic salt, garlic powder, seasoning salt, cayenne pepper and didn't use the old bay seasonings. used whole wheat ritz crackers and plain bread crumbs. This was sooo good. Thanks for the recipe! will make again.

Spicy African Yam Soup

Reviewed: Feb. 11, 2010
Wish i could give this more than 5 stars. it was amazing. I have never had this. The only changes I made was using white beans instead of garbanzo. I used whole wheat orzo instead of cooked rice (orzo cooks in 5 minutes so it was perfect for this) I sauteed, chayote, onions, garlic, corn, with seasonings, then used only water, added real yam cut in smaller portions, 3 tlbs of peanut butter, and cooked for 45-50 minutes. It was a hit. I will make this often. Ty so much for the healthy and wonderful comfort food.

Black Bean Quesadillas

Reviewed: Jan. 24, 2010
i just popped these in. I used a smaller version, choosing to eye ball my ingredients, which were chopped onions, minced garlic, garlic salt, and a dab of garlic power. Mashed half a can of black beans with reduced cheese, and put on two soft tortillas and baked...thanks so much for the quick and easy recipe which I plan to use again. It was nice NOT to fry something...

Peanut Butter Oatmeal Cookies

Reviewed: Jan. 22, 2010
Wow. i love this. i didn't have all the ingredients but used rolled oats, butter, brown sugar, the salt, and whole wheat flour with 2 eggs, whipped it all in one bowl, and baked at 375 degrees. Because I wanted to keep half of the batch, I selected to freeze a few cookies for later use (the following week and baked around 8 big luscious cookies). Thanks for the great recipe.

Zucchini and Potato Bake

Reviewed: Jan. 18, 2010
Very easy and good. I used green pepper instead of red pepper but i did chop up my veggies and potatoes small and that did make it cook quicker. used a good amount of parsley, seasoning salt, garlic powder and garlic salt with some oregano and bread crumbs. this one is a keeper and I used it as a main meal with some left over for lunch.

Golden Yam Brownies

Reviewed: Jan. 18, 2010
I wish we could give you more stars. this was easy, and yummy. I used canned sweet potatoes but will use real ones next time. I used all ingredients except vanilla extract. this was sooo good. I used 3/4 cup of brown sugar and white sugar, along with everything else -- baked at 350 degrees. Didn't use the glaze because you didn't need this. I cannot believe they are this good and will use this again. thanks!

Fried Cauliflower

Reviewed: Jan. 14, 2010
Absolutely divine. I used breadcrumbs, seasoned salt, garlic salt, garlic powder, oregano and parsley, cooked in EVOO. it was a little messy but the results wonderful. I ate half a head of cauliflower with a multi-tiered salad that included red peppers, zucchini, on a bed of lettuce and a dash of shredded cheese. I will make this again. Thanks !

Crispy Barbequed Tofu Slices

Reviewed: Jan. 7, 2010
Okay, you've made me a beliver in Tofu. I never lied it and this recipe has restored me from the nasty, unhealthy fried chicken i used to eat. I did all the steps in the recipe and used bbq sauce to dip my tofu slices. Everything came out nice and crispy (i did bake my tofu slices first), but overall wish I could give you more than 5 stars. This was sooo delish! Thanks.

Grilled Cheese Sandwich

Reviewed: Jan. 3, 2010
this is wonderful and I agree, you should cook on low heat. i just did one with high heat and had to turn down the heat so my sandwich would not be burnt. i think this recipe words well with whole wheat or white wheat -- it's simply delicious!
