Chocolate Mint Candies Cookies

These tasted like thin, minty brownies. They were good, and I'm sure we'll make them again.

Apple Crisp II

Reviewed: Dec. 15, 2010
This was a great apple crisp recipe! My mother, who doesn't usually like apple crisp, ate some and loved it. I agree with one reviewers comment about using less sugar, I'll try that next batch. I also used a 9x9 in. pan and made the syrup mixture in the microwave. I used a glass liquid measuring cup, putting in the water, then adding the cornstarch, sugar, and vanilla. Mixed it all up and microwaved it for 2 minutes. It came out perfectly and I just drizzled it over the apples. I love apple crisp and was so pleased this recipe turned out so well! Thank you for sharing!!

Oatmeal Raisin Cookies IV

Reviewed: Jul. 28, 2010
I made these cookies for the second time two nights ago and these are the best oatmeal cookies ever!! I didn't soak the raisins the first time, but tried it this time and I noticed a slightly more flavorful cookie, not a huge difference. I even softened my butter in the microwave. The cookies were a little flat, but it doesn't matter when they taste so good! This will be my only oatmeal cookie recipe! Thank you for the great recipe GERIREIN!!

Boudreaux's Zydeco Stomp Gumbo

Reviewed: Jul. 28, 2010
This gumbo is wonderful! I changed it up slightly in order to use what I had in my kitchen, but I tried to stay as close to the recipe as possible. I didn't have 3Qt. of broth, but I did have a 28 oz. box of chicken stock, a can of chicken broth, and a Knorr chicken bullion cube which I dissolved in 2 C hot water. I also didn't have all the peppers so I just diced a whole green pepper, and added that with the onions and celery. I also added about 5 oz of lump crab meat with the shrimp just 10 mins before I took the pot off of the stove and the shrimp weren't rubbery at all. I followed others reviews and really took my time with the roux. I think that makes a huge difference. I let mine get just a bit darker than peanut butter and it smelled nice and nutty. It took about 15 mins. over medium heat. I actually had to get another bottle of beer cause I drank half of the one I had planned to use in the gumbo. But it cooled me off while I was stirring the roux and gave me something to do while I was waiting. :) I also added about 2 dashes of cayenne pepper at the end since it didn't have much heat. My 3 year old son even ate a bowl! That's how I gauge my cooking. It was absolutely delicious!!! I will make this recipe for friends and family. Thanks for the great gumbo recipe!!!

Hazelnut Crusted Halibut with Garlic Mashed Potatoes

Reviewed: Aug. 27, 2009
I am only rating the halibut....and it was great! I used panko bread crumbs because I like a nice crisp crust. It turned out perfectly. My 3 yr old kept shoving it in his mouth. I'm always looking for new ways to jazz up fish, so this is a keeper! Thanks for sharing this one.
