Easy Apple Crisp

Served this for dessert last night and everyone loved it! It is so quick, easy, and delicious. I followed the other reviews and mixed 1/2 cup or so of oats into the cake mixture, and also used a butter cake instead of white. I also mixed the apples with cinnamon, nutmeg and allspice. Used between 1/2 and 3/4 cup of water and baked about 45 minutes and it was perfect. Thanks for a easy recipe!

Cajun Appetizer Meatballs

Used ground turkey instead of beef, and halved the cajun seasoning, since all I had was creole seasoning (and the first ingredient was salt...and some reviews said this recipe was too salty). Cooked for about 30-35 minutes and it was tasty.

Kickin' Turkey Burger with Caramelized Onions and Spicy Sweet Mayo

While I didn't have mesquite flavored seasoning, liquid smoke or steak seasoning (though I looked up a recipe for this to see what spices were in it), this turned out tasty. The sauce, and caramelized onions were delicious, and though the burger patties seemed wet, they cooked up quite nicely.

Cherry Chicken Lettuce Wraps

Interesting flavors, and I loved the crunch of the carrot and almonds. The sauce was really liquid-y, so I added a little bit of cornstarch to try and thicken it up. I may not make again as lettuce wraps (kind of messy), but I think the combo could taste good as a salad.

Calamari

Doubled the recipe (not the salt per other reviews), soaked squid in milk, and added paprika, garlic powder, and some cajun seasoning to the flour mixture. Cooked in batches and didn't have a problem with the coating coming off. Served with a trio of sauces. It was a hit.

Bite-Sized Salmon Tikka

Added a little bit of garam masala, curry power and cumin per some suggestions. Did not use cornstarch, and just used enough oil to cover the bottom of the pan. Everything cooked quickly and it was delicious for being so simple. Would definitely make again. With the suggested amount of cayenne, it was pretty spicy.

Butter Chickpea Curry

Used a can of diced tomatoes instead of the soup and used some plain yogurt instead of milk/cream per other reviews. It was quick and made a nice dish. Next time I would try cauliflower per suggestions.

Washabinaros Chili

Excellent chili! Upped the sausage to 1 lb, used a jalapeno because the store didn't have any habanero, and subbed out one can of kidney beans for a can of pinto. When making again I would drain the liquid after cooking the meat per another review, since the chili was a bit oily. Served with skillet cornbread and it was delicious!

Company Couscous

Added a bit more red bell pepper, and halved the cherry tomatoes. Also added salt and pepper and omitted the Parmesan because we didn't have any. This was light and delicious. Served with the Mediterranean Salmon recipe from this site. Thanks for a quick and tasty side dish.

Summer Corn Salad

Used 4 ears of corn, cooked for about 5 minutes, halved cherry tomatoes, a quarter of a sweet onion, some diced red bell pepper, and drizzled on just a little bit of the oil. Used a little bit of balsamic vinegar and everything tasted incredibly fresh and sweet, with just a bit of tang from the vinegar. It made 6 servings easily. Maybe more. I can't wait to make this again during the summer!

Stir-Fried Shrimp with Snow Peas and Ginger

Quick to make, and a good mild flavor. I probably added more than 6 oz of peas, and also tossed in some red bell pepper and scallions I had in the fridge. Served over rice and it was a light, quick, weeknight dish. Thanks!

Cajun Style Stuffed Peppers

Sized down to make only 4 bell peppers. When I went to cut my spicy Italian sausage, it fell apart, so I took it out of it's casing, and cooked it before tossing in the shrimp. Used already cooked rice, so no chicken broth. Didn't blanch the peppers, and topped them with some panko & Parmesan. Baked at 350 for about 20-25 minutes. Delicious flavors and a fun twist on a regular stuffed bell pepper. Will definitely make again!

Carrot Cake III

This was a tasty carrot cake, but a bit sweet. If I made it again I might dial bake a little on the sugar. I also omitted pecans from the batter, because I dislike nuts in my cake. Overall, a delicious recipe.

Mediterranean Salmon

Nice, light flavors and a quick dinner to make. I omitted the garlic salt and cilantro, just poured enough olive oil and vinegar to coat the top, and sprinkled a little bit of regular salt on top. Chopped up more basil since I don't like cilantro. Baked for about 15-18 minutes in a 375 oven, and it was delicious!

Blackened Chicken

Tasty and quick chicken recipe. Although we had to cook our chicken breast much longer than 5 minutes in the oven - after 5 minutes, it was still raw. It took probably another 10 minutes or so. Would definitely make again - good flavors.
