My favorite family cooking traditions
Cooking together as a family was something I grew up with. I remember my parents looked like they were always having so much fun in the kitchen. It was something to look forward to. Now as an adult, I crack open a bottle of wine with my husband and spend half the day cooking and just enjoying each others company. Just like my parents!
My cooking triumphs
I have always enjoyed cooking, but it wasn't until my father got me a subscription to "Cooks Illustrated" (the best cooking magazine in the world!) that I really started looking in to the science of it all. I have learned a lot about the way food "works".
My cooking tragedies
I don't really have any tragedies. Typically, when I am entertaining, I will do test run of what I'm making first, so I can make the appropriate corrections for the "big meal". I have extremely high expectations of myself when it comes to cooking. With a little patience and practice I have gotten to the point that my husband and I often find it hard to enjoy restaurants because we usually just end up critical of their cooking!

Rubbed and Grilled Pork Loin
This rub is very Good, and it's super simple! I would venture say this rub would work nice with any cut of pork.

Not Your Every Day Smoked Pork Spare Ribs
Very good. My husband and I are always trying to find the "best rib recipe ever" I'm still looking, but this recipe is definitely up there! It's for sure "Not your every day smoked pork ribs" but that's what I love about it. Let's face it, anyone can put store bought bbq sauce on some ribs. I'm not a huge fan of spicy food, so I only added 1/4 tbs of cayenne pepper, and 2 tbs of red pepper flakes. I left the rub on it for 24 hours, and cooked it over indirect heat at 250 degrees, for 8 hours. Overall, I would definitely make this again.

Chicken Enchiladas I
This a great American version on enchiladas. True Mexican enchiladas are made with corn tortillas, if made with flour tortillas it is classified as a burrito. Besides that, this is a safe recipe that I'm sure will be a crowd pleaser. The only thing that I changed, to make it a little more authentic was, the chicken. I boiled a whole chicken and shredded it, mixing the light meat and dark meat. Not only is it a money saver, but the chicken comes out super moist too.
