Mom's Sweet Potato Bake

This is SO SO good! I made it as a dessert dish, so I did not cut the sugar. I used oatmeal instead of pecans and added 1 1/2 tsp of cinnamon. Delicious!

Butter Chickpea Curry

Wow- Yummy! I try not to use canned products, so I used 1/2 cup dried garbonzo beans and cooked them completely, then followed the rest of the directions. I used 10 oz of pureed tomato in place of the tomato soup, butter instead of oil and half and half for the cream/milk. I used buttercream potatoes and left the skins on along with about a half a cup of cauliflower. Very rich and delicious. Spices are perfect. The adults in the house really liked this curry, but the kids (ages 14 years old and 2 years old) did not.

Alfredo Sauce

Very good. I tripled the recipe. Added 3 cloves garlic and a 1/2 tsp parsley. Used all shredded Parmesan cheese. To add the egg yolk, I followed other reviewers suggestions and removed some liquid from pot, slowly added yolk to it, whisking constantly then slowly added back into pan, while whisking. It took longer than stated to make - closer to 45 minutes before I was happy with how thick it was.

Spiced Butternut Squash Soup

Wonderful! I used sweet potatoes, added two apples and used 6 cups of broth. I left out the ginger and sherry because I didn't have any. Will make again!

Cuban Black Beans II

One of our favorite recipes. I make it at least once a month and serve leftovers with sauteed veggies as fajitas. One important note: Cook the beans COMPLETELY before adding tomatoes or vinegar. Other than that, it's awesome without any changes.

Spinach, Red Lentil, and Bean Curry

Very good! Doesn't need extra spices at all if you make the garam masala on this site - it is a mix of 7 or so spices. I did add 2 TB brown sugar and 1 1/2 cups corn. My mother, husband, 14 year old daughter, her 12 year old friend and my 18 month old all loved it.

Lentil Soup

I followed other suggestions and used vegetable broth, and doubled the spices and tomato. I also added parsley and italian seasoning. I was surprised, but the balsamic vinegar was good in it. Will make again.

Egg Salad Sandwiches

Delicious! I used fresh onions and celery, chopped very fine. I used 1/2 cup miracle whip and 1/4 cup mayo. Both my mother and I had seconds! She said it was the best egg salad she's ever had- the dill really made it great.

White Beans with Rigatoni

Very easy, tasty pasta- my whole family loved it. Even my very picky 12 year old daughter ate a whole bowl! I made 2 substitutions: 1) I didn't have kale, so I used spinach instead; 2) I used 1 tablespoon Italian seasoning (which has sage) instead of sage.

No-Cream Pasta Primavera

Good. I didn't have any asparagus, so I used extra green beans and tomato. Other than that, I followed the recipe exactly and it turned out perfect. It's a lot of work though, and I'm not sure I'll make it regularly.

Gypsy Soup

Very flavorful soup. Good but not excellent. Turned everything (napkins, etc., yellow, though from the turmeric). I followed some of the suggestions and 1) doubled the broth and the spices 2) used 3 cups sweet potatoes 3)substituted soy sauce for tamari 4)used canned, diced tomatoes and 5) added corn and carrots at the end with the green pepper. Served with biscuits. Delicious!
