Broccoli Cheese Soup

I also followed the advice to double the Velveeta and broccoli. When the broccoli had softened in the chicken broth, I used an immersion blender to puree much (but not all) of the broccoli. At the end (after the soup had thickened), I added 8 oz of sharp, shredded cheddar. Usually I get impatient with folks who change everything about the recipe, but these tips did yield a great result. This soup is fantastic!

Spicy Rapid Roast Chicken

Maybe I'm just having a bad day, but this chicken turned out awful-- rubbery and chewy and burned on top. Followed the directions exactly. Hmmmm.

Aunt Johnnie's Pound Cake

This is by far the best pound cake I've ever had. I have always made it in a large pound cake pan (tall, straight sides)...NOT a bundt pan. Also, I do not like almond flavoring, so I use a combination of butter flavoring and vanilla extract. By following the rest of the directions exactly, I've never had this cake fail me, and I've made it probably two dozen times, and folks who eat it have asked me if I bake professionally when they try it. The secret is the flavoring and the cake flour.

Chocolate Cobbler

My only change to this recipe was that I made it with "special dark" Hershey cocoa, and it was fantastic. Next time, though, I will reduce the butter and bake it in a 9x9 rather than 8x8 pan because it cooked over in the oven.

Luscious Slush Punch

Strawberry Dream Cake I

I'm not even much of a fan of fruit in my cake, but I made this for a bridal shower, and it was absolutely delicious. The texture and flavor make it hard to believe that it isn't from a bakery. I had a little problem getting the layers out of the pan cleanly, so next time I will definitely use parchment paper or wax paper. I also chilled the frosting overnight before putting it on the cake and had no problem with it not being thick enough. It was just a fantastic combination of white chocolate and strawberries!

Shrimp Fondue

As it is, this recipe might be bland. I used half the sour cream, added 1/4 cup dry white wine, 3/4 tsp Old Bay, 1 and 1/2 tsp fresh garlic instead of powder, a few dashes of hot sauce, some paprika, and a bag of salad shrimp. It was delicious, and even my very picky husband (who doesn't like cream cheese, sour cream, or swiss cheese) devoured it. I can't wait to try it with scallops or over pasta!

Chocolate Caramel Brownies

Dark Chocolate Cake I

I followed the recipe exactly (except (I used a 10x14 inch pan, which worked great). The texture was perfect, and it might have been the most evenly shaped cake I've ever baked. LOTS of compliments on the flavor of this excellent cake!

Southern Living magazine's Breakfast Casserole

With all the good reviews, I thought this would make a great casserole for a brunch at work, but I just wasn't that impressed. I used sourdough bread, sharp cheddar, sage sausage, and a tsp of Emeril Essence (in addition to other ingredients, minus the salt), but it was still bland. The guys at work liked it (they said there's no way to screw up bread, sausage, egg, and cheese), and there wasn't much left, but I didn't have much desire to eat the leftovers. If I were to try this again, I would definitely add at least two more eggs and mix crumbled bacon with the bread, then use ham or bacon on top. My sausage also dried out a little on top, even though I added some cheese in the last ten minutes of baking.

Caramel Pie II

Once this pie was finished, it was truly delicious, and our friends were coming over just to steal pie out of the refrigerator. However, the cans kind of exploded when I opened them after three hours of boiling. No damage done (except to the paint in my kitchen)... Did I boil them too long?

Caramel Brownies I

This recipe isn't the quickest in the world, but it may be the BEST brownie recipe in existence. I have made it for friends, and now when we get together for food, I have many requests for these brownies. They are GREAT!

Lemonade Pie III

I took this pie to a party and no one believed it had only three ingredients (not counting the crust!) and took less than ten minutes to make. Incredibly lemony and smooth! Also, this pie has a great glossy finish, so it looked as good as it tasted.
