Jalapeno Popper Mushrooms

Oh my goodness, these were SO good!! I used some of the bacon fat to sautee the mushroom stems, garlic etc, instead of olive oil. Really helped round out the flavour. Also used jalapeno slices in a jar, as I had none fresh. I followed another reviewer's suggestion and pre-baked the mushrooms stem side down in the oven for 5-10 minutes and then drained them on paper towels to get the excess moisture out, before filling. This helped quite a bit to maintain a wonderful texture to the mushrooms without them getting mushy. Make these.....NOW!!!

Best Chocolate Chip Cookies

These are seriously the best chocolate chip cookies ever, and very hard to stop eating, lol. I'm not fond of overly sweet goodies, so with this I decreased white sugar down to a 1/2 cup, and kept brown sugar at 1 cup. Also didn't use any nuts, kept it simple. Really stellar recipe. I made sure to use the electric beater to get the butter and sugar really soft and fluffy, and did the same with the eggs and other ingredients. Made for some really moist, slightly crunchy, slightly chewy cookies. Wonderful recipe, have made it many many times already. I also keep any leftover cookies in air tight containers or little ziplock bags to keep them fresh and moist for longer. Thank you for this recipe! :)

Dad's Flat Bread

Lovely, flavourful bread with a crunchy crust, yet moist and chewy on the inside. Made with olive oil and more whole wheat flour than all-purpose with great results. Can see using this as a base for many alternate bread recipes.

Buttertart Squares

Sooooooo yummy. I didn't put in the walnuts or coconut, because I didn't have any, and it still tasted gorgeous. I just added a little bit more oats to help bulk up filling. Wow, so good. My husband LOVED it.

Brownie Snack Cake

Very moist. Almost a cross between a cake and a brownie, which was lovely. Definitely not heavy, but was actually quite light. I used 2 eggs, instead of the 4 egg whites (didn't have any more eggs), and whipped them up best I could before adding the rest of the ingredients. Will make again, especially considering I don't have to use butter. Great lower fat brownie recipe.

Easy Sugar Cookies

It's hard to stop eating these! They seem to go faster than I can make them. Really easy to make, which I love, and almost fool proof. To make some gorgeous christmassy cookies, I rolled them in colored sugar before baking. Everyone seems to love these! For a little more special taste, I added 1/2 tsp of vanilla and 1/2 tsp of almond essence, really makes the flavours pop. Will definitely make again :) UPDATE: Made these for Christmas 2009 to give out in a gift basket to people. Everyone loved them! Just made them again this evening for a quick sweet bite after dinner, and again, they never fail to please.

Raspberry and Almond Shortbread Thumbprints

Oh my goodness, these are amazing and remind me of my childhood. I didn't have almond essence but they turned out amazing anyway and taste superb. I noticed that even though the shortbread was a bit crumbly, it still help up in the oven really well and had a nice crunch. Once they cooled, you couldn't stop my husband from eating them, rofl.

Brooke's Best Bombshell Brownies

If I could give this recipe more than 5 stars, I would. I think I just died and went to heaven. These brownies taste like those that you'd get at the most amazing restaurants! I didn't have enough butter, so I substituted 1/2 cup vegetable oil and used 1/4 cup of butter, and they turned out perfectly moist and chewy with a slightly crunchy top. Also, I decreased the amount of sugar to 2 1/2 cups sugar, since I like my brownies a little less sweet. I'm not sure if I can wait till my hubby gets home. Next time, definitely making double batches! Thank you so much for this recipe! :)

Cake Mixes from Scratch and Variations

Loved it, was truly easy and yummy. I love the fact that I'm in charge of the ingredients. I made them into cupcakes and baked them for around 18 minutes in a 350F oven. They turned out lovely and moist. However next time, I might add more than the amount of cocoa to make the chocolate cake mix.
