The Best Lemon Bars
Oh my goodness, these are fabulous. I made half the recipe in an 8x8 pan, but used the juice of 2 lemons and the rind of 1 of the lemons in the topping mix. I added 2 extra tablespoons of flour into the topping mixture to help with the setting due to the extra juice. Absolutely scrumptious and will definitely make again.

Jalapeno Popper Mushrooms
Oh my goodness, these were SO good!! I used some of the bacon fat to sautee the mushroom stems, garlic etc, instead of olive oil. Really helped round out the flavour. Also used jalapeno slices in a jar, as I had none fresh. I followed another reviewer's suggestion and pre-baked the mushrooms stem side down in the oven for 5-10 minutes and then drained them on paper towels to get the excess moisture out, before filling. This helped quite a bit to maintain a wonderful texture to the mushrooms without them getting mushy. Make these.....NOW!!!

Best Chocolate Chip Cookies
These are seriously the best chocolate chip cookies ever, and very hard to stop eating, lol. I'm not fond of overly sweet goodies, so with this I decreased white sugar down to a 1/2 cup, and kept brown sugar at 1 cup. Also didn't use any nuts, kept it simple. Really stellar recipe. I made sure to use the electric beater to get the butter and sugar really soft and fluffy, and did the same with the eggs and other ingredients. Made for some really moist, slightly crunchy, slightly chewy cookies. Wonderful recipe, have made it many many times already. I also keep any leftover cookies in air tight containers or little ziplock bags to keep them fresh and moist for longer. Thank you for this recipe! :)
