Pesto Turkey Burgers

This is the recipe that just might redeem the turkey burger for those of us that love juicy, flavorful burgers. I was looking for leaner burger options and I am so glad I gave this a try. The pesto gives the turkey meat enough juiciness and the flavors are like fireworks. Yummmmm.

Key Lime Cream Pie

I ended up with a whole mess of lemons and limes from centerpieces after a wedding and didn't know what to do with them. I was hesitant to try this recipe because there are so few ingredients and it is so simple. I thought anything as amazing as Key Lime pie must be more complicated. Not true! I made a pie about once a day until all the fruit was gone and I was never lacking for people who wanted to take it home with them. I used a 50/50 mixture of fresh lemon and lime juice in place of the key lime juice. It was awesome!

Ham and Broccoli Strata

This is always a hit when I have a group over for breakfast. I substitute fresh asparagus for the brocolli and use a teaspoon of dry mustard in place of dijon mustard. I used the dijon once and it didn't mix in completely. One of mu guests for a giant mouthful of mustard. GROSS! With the dry mustard and asparagus it is a definite crowd pleaser.

Creamy Eggnog Fudge

This recipe didn't work at all for me. I used semisweet chocolate rather than white but I don't think that should have made a difference. It didn't really harden and the eggnog taste was so strong that it tasted like it had alcohol in it.

I was a bit disappointed in this recipe. There are enough ingredients that I expected it to taste more complex but it came out flat to me. I love indian food and this didn't feed that craving.

Taco Stew

I always have the ingredients on hand to make this. It is quick and easy and truly idiot-proof. I often doubt its deliciousness when I am making it but it never fails. Once it is done cooking it is a five star weeknight dinner. I have served it with cornbread and with cheese and crackers. Both are winners in my house. I don't change a thing about the recipe but I wouldn't be afraid to.

Creamy Chicken and Wild Rice Soup

I love this soup. It has become my signature dish for bringing to families with new babies. I add carrots and celery and use milk instead of heavy cream. It is still plenty creamy that way so I can't imagine how thick it is with heavy cream. I don't think there is enough rice in it so I usually double the recipe but use three packages of rice and add a little more liquid to compensate.

Cranberry Bread Pudding

I can't give this enough stars. I truly dislike bread pudding and got volunteered to make some for christmas brunch. I tried 3-4 of them before this one and still couldn't bring myself to like it. This one changed everything. Sweet, tart, breakfasty and desserty at the same time. Love it!

Caramels

I love the taste of these caramels but I couldn't get them to set up. They ended up being little pools of caramel that still tasted delicious, but couldn't be given as gifts. I coated mine in tempered chocolate and sprinkled them with sea salt and they were divine, just not pretty.

Couscous, Cranberry, and Feta Salad

My family loves this dish. The first time I made it I noticed that it was quite dry so I added a decent amount of garlic infused olive oil. That made it 5 stars!

Cranberry Pecan Muffins

I have kept this recipe a secret from my girlfriends who just ooh and ahh over my cranberry pecan muffins. As with all baking I do, I only use real butter and always double the vanilla. I also make about 2 fewer muffins than the recipe calls for and fill the cups VERY full so they get a nice big bakery crown on top. I use course sugar to sprinkle on the top.

Chicken Parmesan Casserole

I made a bunch of improvements and it still tasted generic. I used real chicken breast and breaded it before baking. I added italian seasoning used parmesan cheese with the breadcrumbs.
