Cranberry Pork Roast

Delicious! The only downside is you will have to cut thick slices if you want a nice presentation for guests. That is, if you consider meat so tender it falls apart a downside!

Spiced Plum Pork Chops

This was delicious and smelled so good while it was cooking! I doubled the plums and reduced the cooking time to about 6 hours.

Couscous Salad with Dried Cherries

My boyfriend and I have been trying to add different grains to our menu, but our first couscous attempt was a little bland - he described it as sawdust. I tried this even though I wasn't sure about the blend of flavors. We both thought it was great and he gladly took leftovers for lunch the next day! I used orange-flavored Craisins because it was what I had. I was worried they might be too sweet, but they were not. I did pre-plump them as was suggested. Light and tasty summer recipe. Will definitely make again.

Slow Cooker Italian Moose Roast Sandwiches

This is not for the faint of taste buds. The pepperoncini give it quite a kick, but it is very good. I made with vension. Reheats well, too. In fact, my boyfriend is taking leftovers with him hunting this weekend!

Garlic Salmon

I was excited to try this after all of the rave reviews. I found the overall flavor rather bland and guess in general I prefer my salmon baked to steamed in foil. Will not make again. Also, where the lemons touched the garlic, the garlic turned a bluish color and looked like mold, which was not very appealing.

Broccoli and Tomato Bake

This was different, but we enjoyed it. I had plenty of tomatoes from my garden, so I used those. My quantity was probably a little off because my sauce was pretty thick, btu we all enjoyed it.

Banana Plum Bread

My husband liked it, but I was a little disappointed. It was pretty dense and a little dry, especially compared to the banana bars I make. Next time I need to use up plums, I may just add them to my own recipe.

Apricot Chicken with Balsamic Vinegar

Chocolate Peanut Butter Bars IV

RIDICULOUS! That's how good these are! I was glad to read they could be frozen, but truthfully we will eat them all before I get them in the freezer. I did cut butter to 3/4 cup as others recommended to save a little on fat and calories. I softened the butter in the microwave and then added the pb to the bowl to finish melting the butter and soften the pb. Made it very easy to mix. I will probably add an extra cup of chocolate chips on top as anotehr reviewer did, but just because I like a little more chocolate. These are great the way they are written. I will try not to make these too often as we eat way too many!

BBQ Feta and Hot Banana Pepper Turkey Burgers

I expected my husband and son to groan at these, but they both liked them. My husband even had seconds and claimed another for his lunch. I made them the night before and froze the burgers, then took them out to defrost in the morning. No problems with them falling apart. I usually get ground turkey in a 20.8 oz. package, so I increased the peppers to 1/3 cup and feta to 2/3 cup and the # of burgers to 6. I bought a jar of banana peppers and couldn't remember if they were supposed to be hot or mild, so I just got mild. When I reread the reviews, seems most people used hot. My husband had barbeque sauce on his. I think lettuce and tomato would have been a good addition, but I only had grape tomatoes. I may add cheddar or pepper-jack on top next time, but that's just because we really like melted cheese on our burgers.

Apple Cole Slaw

When my husband saw me making this he questioned the apples, but everyone who had this at our party enjoyed it and he has said I can make it again anytime. I used a 16 oz. bag of shredded cabbage and carrots, left out the "additional" carrot, and followed the rest of the recipe.

Meatball Nirvana

I have been looking for a good meatball recipe and I have finally found it! My meatballs were on the small side, so thebaking time was just a touch too long, but still good. I ate one right after they came out of the oven because they smelled so good! Served with Brooklyn Girl's Penne Arrabiata from this site.

If you don't like spice, cut back on the red pepper flakes, but this was a delicious spicy tomato sauce. I served it with Meatball Nirvana from this site instead of the chicken. Agree with others this doesn't make 6 servings. More like 3-4.

Cauliflower and Broccoli Bake

I'm not a huge fan of cheese sauce over my veggies, but my husband is, so I tried this. We were both very disappointed. I steamed the vegetables for 3 minutes and they were still overcooked and almost tasteless. And the sauce was very watery. It is the same way I make sauce for macaroni and cheese, so my guess is that the vegetables release water as they bake and dilute the sauce. Will definitely not make this again.

Hershey's® White Chocolate Cinnamon Scones

This is a family favorite. I am requested to make it every year for Christmas morning, but nobody complains if I make them more often. These make a good-sized scone, so I cut the wedges in 12 and reduce the baking time.

Spinach Lasagna III

I made for a family birthday party and it went over very well. I made a few minor changes - used frozen spinach, which was fine. Doubled the mozzarella because I like more cheese. Also, I put a layer of noodles and sauce on top and put cheese on for the last 15 minutes of baking. Note - if you make ahead and refrigerate, it needs to bake for about 90 minutes to heat through.

Chicken with Asparagus and Roasted Red Peppers

My boyfriend described this as "tasty", but said he would add more tomatoes and more cheese. Of course, I had already doubled both of those, knowing he would say that! I made several changes, but all staying within the idea of the recipe. I increased the broth to 1 cup as several reviews had said it evaporated and still ended up adding more water to the pan. I didn't want the added salt of the broth, but white wine would probably have been good as well. I used 1 fresh red pepper and 1 15 oz. can of diced tomatoes, pepper jack cheese, and increased balsamic vinegar to 1 Tbsp. I also used garlic salt on the chicken and omitted the fresh garlic (boyfriend's preference, not mine). Served with mashed potatoes. Definitely will make again.
