Quick Savory Cranberry Glazed Pork Loin Roast

I was a little disappointed in this. I didn't think the sauce added much flavor to the meat for all of the basting. Cranberry Pork Roast made in the crock pot is much better in my opinion.

Brownie Cupcakes

The flavor of these was very good. I wish I could figure out how to get the top to stop cracking. Makes them messy to eat and difficult to frost - for those of us who think a "cupcake" is not complete without frosting :)

Lemon Cupcake with Blackberry Buttercream

The 1st time I made these, I messed up the order on the cupcakes, even though I know better, so I thought the fact that they were a little dry and heavy was myu fault. But the second time I made them correctly and they were the same. Flavor is nice, but texture is not great. The frosting however is so fantastic, I would give it 6 starts and no one really noticed that the cupcakes weren't great because I used plenty of frosting to make up for it. This is my new frosting basic recipe.

Baked Lemon Chicken with Mushroom Sauce

Baked this way my chicken came out rubbery. The sauce was good, but if I made it again, I would halve the flour. It was so thick it couldn't really be called sauce. I added at least 1 cup of chicken broth to get something that resembled sauce.

White Chocolate Blondie Brownies

Made these for my husband's birthday and he told me not to change a thing! Here's what I had done - used 3/4 c. each white sugar and brown sugar, 1/2 c. each white chocolate and butterscotch chips and no salt. Also used spelt flour due to family gluten issues, but would probably also be good with 1/2 white whole wheat flour.

Autumn Spice Ham Steak

I was a little disappointed in this. I expected the apples and syrup to add some sweetness, but the apples didn't pick up much maple flavor and the resulting sauce was actually a little salty.

Missy's Candied Walnut Gorgonzola Salad

I was inspired to try this recipe that I had already saved after having a similar salad at a restaurant. It was my 1st attempt at candied walnuts and both my husband and I were very pleased! I used goat cheese because that's what I wanted and forgot to buy raspberry vinaigrette, so made the dressing from Grilled Chicken Salad with Seasonal Fruit (reduce sugar and oil by 1/2). I added some raspberries as well. Pears, peaches or blueberries would probably also be good additions. Will make many times again!

Real Strawberry Frosting

My husband requested strawberry cake with strawberry frosting for his birthday, so I tried this. I used frozen strawberries with sugar as I needed 1/2 a container for the cake. I did strain the puree, as I always do when I make puree. Frosting was delicious, but the strawberry cake, frosting, and filling all together were a little sweet, even for our family of sweet toothes! But I think this with Strawberry Cake Filling would be awesome on a devils food cake. Will definitely do it again.

Pork Tenderloin with Dijon Marsala Sauce

I used 1 lb. of boneless pork chops. The mustard on the chops was a little overpowering for me, but I typically use scant amounts of condiments because I find them generally overpowering. The sauce was absolutely delicious! Will definitely make again and try it on chicken as well.

Honey Wheat Bread II

This is the first yeast bread I have made in years and my family was very happy with the results! I used Rapid Rise yeast, so mixed the yeast with the flour, then heated the water, added the honey, then added to the flour mixture. Next time I think I will double the honey and omit the oil. The honey taste was a little faint for me. I think I could have also used a tad bit more flour to make a little less doughy, but that is one of the tricks to making a good yeast bread that comes from experience.

Boyfriend Brownies

These are absolutely delicious! My reason for the 4-star rating is because 1) if you make in a 9x9 pan as stated, you will likely be disappointed and have a mess in your oven (need a 9x13 pan as others recommended) and 2) the brownies fall quite a bit in the center. But make in a 9x13 pan and you will have delicious brownies. This may be a good candidate for one of those special brownie pans to reduce the falling during cooling. Also thanks to those who offered advice on tempering the eggs. I have been baking for years and never heard of this very useful technique that I will not be applying to some other recipes as well. I omitted walnuts as I don't love them in my brownies and used white chocolate chips mixed in because that's what I had. I also have been experimenting with using more brown sugar and wheat flour in recipes. Split the sugar 1/2 white and 1/2 brown. Used 1/2 cup King Arthur's White Whole Wheat flour and the remainder all-purpose flour. Will be making many times and will likely change around the mixed in chips to fit my preference for the day.

Chocolate Peanut Butter Bars IV

RIDICULOUS! That's how good these are! I was glad to read they could be frozen, but truthfully we will eat them all before I get them in the freezer. I did cut butter to 3/4 cup as others recommended to save a little on fat and calories. I softened the butter in the microwave and then added the pb to the bowl to finish melting the butter and soften the pb. Made it very easy to mix. I will probably add an extra cup of chocolate chips on top as anotehr reviewer did, but just because I like a little more chocolate. These are great the way they are written. I will try not to make these too often as we eat way too many!

Oven Fresh Seasoned Potato Wedges

Loved these! I used garlic salt instead of powder, so reduced it to 1/2 tsp. and omitted the regular salt so it wouldn't be too salty. I used red potatoes because that's what I usually buy. Maybe if the russets are large, 2 potatoes will make 4 servings, but I used 4 medium-sized red potatoes for 3 of us. Will definitely make these again!

BBQ Feta and Hot Banana Pepper Turkey Burgers

I expected my husband and son to groan at these, but they both liked them. My husband even had seconds and claimed another for his lunch. I made them the night before and froze the burgers, then took them out to defrost in the morning. No problems with them falling apart. I usually get ground turkey in a 20.8 oz. package, so I increased the peppers to 1/3 cup and feta to 2/3 cup and the # of burgers to 6. I bought a jar of banana peppers and couldn't remember if they were supposed to be hot or mild, so I just got mild. When I reread the reviews, seems most people used hot. My husband had barbeque sauce on his. I think lettuce and tomato would have been a good addition, but I only had grape tomatoes. I may add cheddar or pepper-jack on top next time, but that's just because we really like melted cheese on our burgers.

Cheddar Spirals

Used fat-free half-and-half, reduced butter to 1/4 cup, and topped with some garlic salt (something I picked up from my mother). I cooked on low for about an hour and then added the spirals. Made this for our 4th of July barbeque and everyone loved it even though it got a little overcooked because we ate later than I had planned.

G-Street Surprise

I thought this would be fun to make for a 4th of July party, but our family includes several lightweights and non-drinkers as well as some teens, so I made it alcohol-free. I am sure with the alcohol, the proportion of ingredients would be great, but it needed something without the alcohol. I added another 1/2 cup of strawberries and it was perfect. A real hit at the party!
