Creamy Peanut Butter Fudge

This was my first time making any fudge and it turned out great. I read some of the other reviews and made sure it was a rolling boil for a full 7-8 minutes. I also waited about 5-10 minutes before adding the marshmallow and the peanut butter. I waited till the next morning when it had cooled and frosted it with melted chocolate chips. I got rave reviews and couldn't keep my 7 year old out of it! The texture was perfect, I will be making this every year now.

Imitation Meatloaf

A great place to start from, I used flaxseeds instead of wheat germ and I sauteed some leeks and garlic with herbs before adding to the mix. I also thought it might be a bit dry so I added more crushed tomatoes and it turned out great. Hard to get my boyfriend excited about imitation meatloaf but he loved it and the leftovers were the best part.
