Chicken Tagine

Reviewed: Mar. 15, 2009
I thought this turned out great - much more interesting than the the typical slow cooker recipes. I used frozen chicken breasts and shredded it into big chunks at the end. The chicken was delicious, super moist. I left out the fruit and adjusted the sauce a little to my taste (more cumin, fresh ginger, etc.). It's a great base, I think it would be hard to mess up. (And trust me I know how to mess up a recipe.) I served with brown rice and thought the leftovers were even tastier since the flavors seemed to blend even more.

Oatmeal Pancakes

I love these. My new favorite way to make pancakes. Very tasty and feels like more of a breakfast than just regular pancakes. I add about a tablespoon of brown sugar for a little sweetness. They do take a little longer to cook than regular pancakes so test one before you pull them off the griddle.

Spicy Black Bean Cakes

Reviewed: Feb. 25, 2009
Very yummy. I love black beans and sweet potatoes, but it would never have occurred to me to eat them together. Followed the recipe exactly, just microwaved the sweet potato for about 2 minutes per someone's suggestion. Both my husband and I thought they were delicious.

Ornament Dough

I thought this was perfect. Very quick and easy. I didn't knead it for 10 minutes, my 2 year old didn't have the patience for that. Probably more like 5 minutes. I didn't need flour for rolling it out, I just rolled it on our counter top (granite) and it didn't stick at all. Before baking I used a straw to punch a hole in the top of each one. After cooking and cooling, I mixed glue with glitter and my daughter and I painted it on.

Banana Oat Muffins

Very moist and not too sweet (which I prefer). Followed the advice of another reviewer and split the white flour with whole wheat flour.

Best Brownies

These are delicious! I've been trying new brownie recipes lately and these are the best so far. Perfect mid-point between cake vs fudgy brownies. I followed the recipe exactly. Watch closely, mine cooked in 23 minutes.

Jo-Ann's Power Bars

Yum,yum, yum. So tasty. Good for you and fills you up so a perfect snack. Super easy to make. I've made them twice now. I changed the nuts to what I had - almond slivers and pecans. Omitted the sunflower seeds b/c I didn't have any. And used dried cherries and CHOCOLATE chunks!
