Persimmon Bread III

I used this recipe to use up pulp I had left over from making fresh juices. I had been looking for a good recipe to use it up and this one called for quite a bit of pulp. The pulp I had used consisted of apple, beet, celery, and lots of carrot. It worked great! it was a little heavy on the all spice for me - but it is still really delicious. half went into a loaf, the other half went into muffins which I baked for around 30 min. The taste great!

Banana Bread VIII

I made this for a class breakfast potluck with vegan students. I added 1 tsp of cinnamon, 1 tsp of vanilla, 1/2 cup walnuts, and 1/2 cup of applesauce just for kicks. 1/2 the flour I used whole wheat. I also put a streusel topping according to another reviewers recipe. They were sooo great, everyone loved them and asked for more.

Berry Sour Cream Cake

I am so disappointed. I was sooo excited to make this, the recipe and reviews were great. I even had a camera ready so that I could add the final photo since this recipe has no image yet. But, It turned out awful:( 1st. I had to bake it an extra 25 minutes! with foil on top because the edges were burning but the inside was still completely raw. 2nd. once I took it out it felt solid on top, but when I cut into it, it all fall apart due to the amount of berries in it. 3rd. I wasted my time and ingredients making a streusel topping because the berries and streusel sunk and the cake ended up baking over top of it all. I used 2 cups blue berries, and 1 cup of blackberries and raspberries; by far too many berries. Next time I will stick to 2 cups blueberries or raspberries only. I have confidence that this could be an amazing recipe so some day I will try it again and give it a better rating. but for now I give a 3 because it has potential.

Too Much Chocolate Cake

I used this recipe for two layers of my wedding cake. I therefore didn't use a bunt pan, but a regular round shape. I used a little bit less chocolate chips because I was worried they would take away from the support of the cake. It all worked out perfectly. I wanted to give the chocolate lovers at the wedding a real treat. They asked for chocolate and they got it. I have also made this since the wedding as a birthday cake for a friend and roommate, and the cake remains got eaten for breakfast everyday, and everyday it got better. I will continue making this cake for the rest of my life! I don't even want to try others. For the icing I used a package of chocolate jello pudding mixed with regular vanilla icing (leftover Betty Crocker) and it went perfectly with this cake.

Simple White Cake

This was the bottom layer of my three tiered wedding cake. It was sooooo good. seriously really easy to make and seriously delicious. I grew up not liking cake at all but this has made me change my mind. It was the perfect density.

This was very simple and very good. I had a lot of cottage cheese (costco size) and needed to use it up. I used the dry type that was almost like try cream cheese. I added grated mozzarella cheese (about a cup) and small chucks of old cheddar just to give some variety.
