Fresh Broccoli Salad

Solid base for this recipe. I cut back on the onion (or maybe I just had a REALLY big onion) and swapped out almonds for sunflower seeds. Slightly adjusted mayo/sugar/vinegar mix to taste before adding to the salad.

Fluffy Pancakes

I was a little reluctant about vinegar in a pancake recipe but I followed the recipe EXACTLY and they turned out really great! The only thing that I might add next time would be the brown sugar that a few people suggested and I WOULD DEFINITELY at least DOUBLE the recipe. The original made 7 smallish pancakes.

Homemade Chicken Parmigiana

This is a really great recipe-We will DEFINITELY make it again!!! While its strength was the amazing sauce I would DEFINITELY double the recipe as there wasn't nearly enough. We sided it with Fiori pasta and would have loved to have draped it with more sauce! The chicken itself was a little bland- not sure what seasoning I'd use to spice it up a little though...hmmm. Also, instead of flattening the chicken we sliced it into cutlets. *Made this with the help of my 10 and 11year olds. There were plenty of things for each to do to feel involved- but be careful as there's a LOT going on in the stovetop area.

Peach Cobbler I

Made this recipe on a "snow day" afternoon with the kids- was super easy- they did virtually everything on their own with very yummy results! We used the original 5 serving size recipe- but didn't have fresh peaches so we substituted a 29oz can of lite sliced peaches (definitely would add another 15 oz. can or even another 29oz next time!!!) We also cut the sugar down to 1 1/4 cups thanks to someone else's suggestion and it was still a bit too sweet even for the kids. *Also added about tsp. of cinnamon sprinkled over the peaches.

Gingered Pork Chops in Orange Juice

I made this recipe with my 11 year old daughter- it was very easy! We opted to omit the brandy and used thinner pork chops to speed things along. We were very pleased with this interesting recipe-would've scored it a 5 if it had a bit more of a kick to the sauce; maybe the OJ diluted it a little too much.
