I am a public school teacher (Language Arts & Spanish grades 7&8) and an army wife & mother of six beautiful children ages 2-20. We live on the shores of Crystal Lake in rural northern Vermont and we like to travel a lot during our summers off.

My favorite foods to incorporate into my family meals are: onions, chicken, broccoli, all kinds of peppers, cheese, pasta, and potatoes.

I usually stick to easy/fast meals during the week like Chicken Chimichangas, Chicken Alfredo, Spaghetti & Meatballs, Chicken Tacos, Chicken Potpie, etc.

My chicken enchiladas & chicken potpies are demanded at school & church potluck suppers!
My cooking tragedies
Oh my GOD! I've only tried to cook a "whole bird" once many, many years ago. Let's keep it to the bare essentials. It was a turkey. It went into the oven raw. It came out burned on the top & raw on the bottom. Enough said.

Fresh Broccoli Salad
Solid base for this recipe. I cut back on the onion (or maybe I just had a REALLY big onion) and swapped out almonds for sunflower seeds. Slightly adjusted mayo/sugar/vinegar mix to taste before adding to the salad.

Fluffy Pancakes
I was a little reluctant about vinegar in a pancake recipe but I followed the recipe EXACTLY and they turned out really great! The only thing that I might add next time would be the brown sugar that a few people suggested and I WOULD DEFINITELY at least DOUBLE the recipe. The original made 7 smallish pancakes.

Homemade Chicken Parmigiana
This is a really great recipe-We will DEFINITELY make it again!!! While its strength was the amazing sauce I would DEFINITELY double the recipe as there wasn't nearly enough. We sided it with Fiori pasta and would have loved to have draped it with more sauce! The chicken itself was a little bland- not sure what seasoning I'd use to spice it up a little though...hmmm. Also, instead of flattening the chicken we sliced it into cutlets. *Made this with the help of my 10 and 11year olds. There were plenty of things for each to do to feel involved- but be careful as there's a LOT going on in the stovetop area.
