Moroccan-Style Stuffed Acorn Squash

This was my first time making this recipe, and I liked it a lot. I used Israeli couscous with yellow raisins. I didn't have carrots or chick broth, so I substituted red bell peppers and vegetable stock. I also added coriander and a dash of curry seasoning. I was going to add Italian sausage, but forgot. After tasting, I think that chicken sausage would be just as good. Make sure to season with salt to taste.

Lentil Soup

Based on other recipes I reviewed, I also added a bit of chicken broth, cumin, corriander & red pepper flakes. I doubled the garlic and bay leaves. Unlike the recipe, I soaked the lentils for about an hour before adding them to the pot. To make this meal more robust, I will add shrimp, sausage or parsnips next time.

Thai Chicken with Basil Stir Fry

Good dish. I used galanga and ginger. If you want to thicken the sauce, add a bit of corn starch. I served this dish over sticky rice rather than jasmine and the combination was good. I also used fresh Thai chili peppers. Didn't have Thai basil, but the Italian basil served its purpose. Big hit with my guests.

Green Papaya Salad

I had green papaya salad recently while visiting Hawaii. There, it was fantastic. I looked at this recipe and thought it sounded the same. I didn't like it at all. Maybe my papaya was too ripe. The fish sauce was definitely too much. I'll try to make it again, but next time, I'll make the salad as soon as I buy the fruit.

Quick Chicken with Asparagus and Provolone

Very easy and simple recipe. It's great for a quick and tasty dinner. I sauteed garlic in olive oil with mushrooms before adding the chicken, which I seasoned with garlic salt, pepper and cayenne pepper. Then, I added the chicken, a bit of white wine, and the broth. I also used fresh asparagus, as suggested. I agree that the cheese should be added at the very end when the meat is removed. I also served this chicken with slices of fresh tomato.

Mediterranean Tilapia

We really liked this recipe. I altered it by seasoning the fish with salt and pepper. I also sauteed the tomatoes, olives, and capers with fresh cut garlic. I served it with asparagus, sauteed in the tomatoe oil, garlic, salt, pepper, added dill seasoning and lemon juice. And served along side couscous.

Spaghetti Squash with Pine Nuts, Sage, and Romano

The dish was tasty, but didn't provide that certain "umph" we were looking for. Also, I cooked it at the temperature and for the time suggested, but the squash still wasn't tender enough. After increasing the temp to 375, and cooking for an additional 10 minutes, it was done. My squash was a bit crunchy (not sure if it's supposed to be soft). I'll make it again, but next time will probably go with brown sugar and butter instead.

Asian Lettuce Wraps

Great recipe. I added a few more ingredients, and subtracted others (added: cilantro, lime, mushrooms, fresh ginger, dried basil, and La Choy rice noodels). I also used ground turkey instead of beef or chicken to make it healthier. I didn't have the fish oil, but used Sesame Oil instead. I can't wait until my family taste it and gives me their opinion(s). This one will stay on my menu.
