About this Cook
A very busy mom and full time graphic designer, inspired to cook more and live better by eating organically, locally.
My favorite things to cook
I go through cooking 'spurts' where I'll cook and bake several times a day, to absolutely nothing the next week. I love to make salads combining new ingredients. I also love tofu, chicken done well, and Indian food.
My favorite family cooking traditions
Sweet vegetarian lasagne, finger-liking tofu, curried brown rice with slivered almonds and celery. Krumkaka traditional Scandinavian cookie cone.
My cooking triumphs
Managed to bake a traditional krumkake, this took many hours of practice using a griddle.
My cooking tragedies
Once used "white wine vinegar" instead of "white wine." I also won't tell you about the time I didn't have any milk to make macaroni and cheese, and i tried to use coffee creamer. It was SO gross!!

Grandmother's Buttermilk Cornbread
I've tried this recipe exactly as it calls. Its absolutely delicious, and a bit sweet. I tried it a second time modified it for lower fat/sugar: 1/2 cup sugar instead of 3/4 cup sugar. 1/4 cup butter, 1/4 cup apple sauce instead of 1/2 cup butter. It turned out great this way! Held it's consistency too. A definite winner.

Sour Cream Waffles
This recipe is delicious. We made these following the directions exactly and they are smooth and not dry!

Boston Baked Beans
Great recipe. I made the mistake of using half canned white beans and 1/2 dry pinto beans, and they didn't get quite cooked all the way through after 2 hours in the oven. Take your time with this and do it right, it will be delicious. Next time i make these I will most likely cook the bacon first as well, modifying it.
