Asparagus, Chicken, and Pecan Pasta

I did make some changes but suspect this would be great with any number of changes or none at all. We have one vegetarian, so I used vegetable broth instead of chicken broth (also added the cooked chicken last so I could serve some without). I added a little cajun seasoning and a bit of red pepper flakes. I was pretty liberal with the amounts of ingredients as well as I was fudging a slightly larger batch and I frequently don't measure. Lastly, I toasted the pecans with some shelled pumpkin seeds that I need to use up. Rave reviews from all of us. Thanks for sharing!

Sweet, Sticky and Spicy Chicken

A different twist on chicken. Very tasty, very easy. Do add flour when browning the chicken. I didn't bother dredging; I just sprinkled some in with the cooking chicken. I also set aside a bit of the sauce and cooked up some fake chicken for my vegetarian. Again, really easy and yummy. I already have requests to make it again. A keeper.

Guacamole

Easy and delicious. Made a large batch for a family gathering and expected to have a lot leftover, but they ate it all! I actually did the right thing and used fresh cilantro and it made all the difference. A keeper.

Southwestern Egg Rolls

The flavor of the ingredients blends so nicely. I skipped the freezing and baked, rather than fried, and we were still very happy with it. What was nice was that I was able to cook everything without the chicken in it to make a couple of rolls for my vegetarian, then added my cooked chicken for the rest of us. Thanks for sharing!

Cuban Shredded Pork

Lasagna Spirals

Subbed cottage cheese for ricotta and added some seasonings. Cooked it covered with a pile of meatballs in the corner for the meat eaters. There is some nuisance value to rolling it up, but overall a very good recipe. My whole family loved it. Thank you.

Indian Chicken Curry II

Very simple and tasty when you need a "curry fix". I found the texture of the sauce a bit grainy, but it's not a huge drawback. This recipe makes a lot of sauce so, if you're not into sopping it up with something, throw in twice the amount of chicken and stretch the dish.

This really was good and quite easy -- a lot of steps -- but none of them difficult. It could also be easily spiced up with red pepper flakes, if you wanted. I'll make it again!
