The Best Slow Cooker Cream Corn
I made this for Thanksgiving, as a side. It was a huge hit with everyone that tried it. I made it mostly according to the recipe as written, except I used two packages of cream cheese instead of three, as other reviewers suggested. I think that three would have made it too cheesy, though it didn't have a strong cheese taste at all with two packages. I used regular salted butter and added some additional salt and pepper to taste, since I like some pepper in my creamed corn, but that's purely personal preference. I would totally make this recipe again, but only for potlucks or special occasions as it's so sinfully unhealthy. Huge hit!

Outrageous Warm Chicken Nacho Dip
I made this last night for a poker party and it was a huge hit. I made it more or less exactly as the recipe stated (I didn't really measure the green onions out, etc) and the flavor was great. It's close to some of the other Velveeta/Rotel dips I've had, but the chicken, black beans, and some of the seasonings just made it different enough to be interesting. The only problem I ran into with it was that it was really runny and didn't thicken up. I've never seen that in a Velveeta dip before. Maybe I didn't get the peppers, beans, or Rotel drained well enough. I might try adding in a small amount of refried beans next time as well, just to act as a thickening agent.

Maple Apple Chicken Burgers
I made this tonight and we loved it. As the other reviewers say, the sauce is amazing. I didn't have any dijon mustard, but had some spicy picante apple mustard from a local orchard which went really well with the overall apple theme. As some of the other reviews had said that the burgers could be a little bland, I used almost a full tsp each of salt and pepper, and added a few diced onions and crumbled bacon as well. It was definitely loose and "gloopy", so it would never work well on a standard outdoor grill, but did very well in the skillet. As my girlfriend is on a diet, I used lowfat mayo, sugar-free syrup, and completely cut out the oil, cooking the burgers with no added oil in a non-stick skillet. This made for an incredibly healthy meal. Even with two burgers, (no bun), this still came out to only about 8-9 Weight Watchers Plus points.
