I have recently had to adopt a gluten free lifestyle due to being gluten intolerant, but my family is not. I have to cook gfree for myself and want to my family to enjoy food too, but it isn't required to be gfree for them.

We always have soup on Christmas eve and I like changing it up to have something different.

Finding a recipe for gluten free corndogs and improving it the 2nd time I made it by adding a little more sugar. It's so tasty

Garbanzo Bean Chocolate Cake (Gluten Free!)
this cake tasted sooooooooooo good. I didn't know how it would turn out with garbanzo beans in it, but it was great! Texturally its very smooth and doesn't have the texture of cake in the first bite, but is perfect after the first bite. My hubby had no suggestions. I served it with a dip of vanilla ice cream. Only issue I had was it stuck to my pan, not sure if I should let it cool completely next time or just leave it in the pan...there will be a NEXT a couple days.

Savory Kale, Cannellini Bean, and Potato Soup
I made this for dinner tonight. I skipped the wine and added an extra cup of chicken broth. I added italian sausage and red pepper flakes for extra spice. I didn't have potatoes on hand, so I added 1 cup of Quinoa instead which upped the protein in this dish alot. I wasn't crazy about the rosemary "needles" because there seemed like a lot, other than that it was awesome! I served it with a piece of provolone cheese cut up in the bowl - will definately make it again!

Honey Baked Chicken I
Was tasty! Not over bearing - but good, my chicken was moist and had a good flavor. I changed and addded minced Garlic instead of the powder. I also added red pepper flakes.
