Cajun Chicken Pasta

We loved this recipe. Took the advise of others as we did not need to consume the calories. I doubled the recipe and used only 1/2 cup of heavy cream and used fat free half and half with a TBSP or so of corn starch. Used the frozen onions and peppers and amped up the seasoning. This is company worthy. Thanks for sharing.

Tomato-Cream Sauce for Pasta

I made this for my family the other night. It will go in my Company's coming file. It was fantastic! I put it in the processor so there were no chunks. Added a pound of shrimp and served it over tortallini. Fantastic and quick. Easy to make on a weeknight.

Special Buttercream Frosting

I agree that this is a bakery replica. I did do half butter and half shortening. Because both of my boys birthdays are in January I have made this twice this month. I really don't like having any left over because it is just too good on a spoon. Not so good for the Weight Watchers....

Heavenly White Cake

Made this for a memorial cake in celebration my daughters 6th birthday. Of course wanted something spectaculare to remember her Birthday. Did it in 3 layers and my family and friends boast of my baking skills...usully. Nobody finished thier piece. My huband gave this a "C".....will maybe try again to see what happened since everyone loves this recipe.

Jalapeno Popper Spread

Made this for a family birthday last night. FANTASTIC! Doulbled the jalapenos and halved the green chilies. Mixed the parm cheese in with the other ingredients then put extra on the top with buttered bread crumbs and baked. My mother the cook of all cooks asked the recipe and my husband asked for 4 more to go to the shack during deer season. Will be making again. Thanks.

BBQ Chicken Sandwiches

Any time my oldest eats four of anything it gets 5 stars. He's way too picky. This was a hit at the cottage with everyone. I did do boneless, skinless chicken breasts in the crockpot but followed the directions for everything else. Will make again and again.

Grilled Salmon II

This was awesome and we didn't have enough time to marinate for more than an hour. I imagine it would be amazing if marinated long enough. Even my picky kids ate it. Had the leftovers on a salad the next day too.

Caesar Salad Supreme

Love this dressing! I make many homemade dressings and my husband and son say this is the best I have made. When you live on the border and can shop in Canada dry mustard is a great ingredient to add to this. Have already made twice this week. Beats my mothers that she raves about!

Rhubarb Cake II

I just pulled this out of the oven and is cooled enough to taste. YUM! I added a cup of strawberries, I was just a bit short on the rhubarb and used wild strawberry jello. Much better than I expected. Will make again!

Grandma Johnson's Scones

These are fab. Just made them for the first time. Only change was craisins and white choc. instead of raisins. After trying can see how some might prefer more sugar but it's not necessary. I will make again!
