Summer Vegetarian Chili

This was delicious and easy. I took it to work thinking it would last a couple of days and it disappeared within a few hours with everyone raving about how good it was (this from a very carnivorous crowd!).

Kiki's Borracho (Drunken) Beans

Great recipe! I used vegetable broth instead of chicken stock, and left out the bay leaves. Very flavorful, and freezes ok. Good for potlucks at work!

Rainbow Veggie Chili

Yum! I used more squash and less bell pepper and threw in some mushroom, but everything else I followed exactly. My friends and I were very pleased with the outcome.

Hot and Spicy Tofu

This was very tasty. I added diced celery to the veggies, sesame seeds to the sauce, and served on a bed of pad- thai noodles. Delicious!

Five Pepper Hummus

This recipe is great, only the amount of cayenne pepper and black pepper is way too much. Cut those by about 2/3 and you should have a tasty and well-presented snack or appetizer.

Ziti Lasagna

This recipe was very tasty, and is easily modified for vegetarians (even vegan if you're ok with vegan cheeses). I would recommend adding sauce on the very top layer along with the cheese to help keep the noodles moist so they don't get burned and/or crispy.
