Mexican Chicken Corn Chowder

I wish I could say that I followed this recipe, but more used it for inspiration for what I had on-hand and it turned out DIVINE (and I have to type it up so that I can refer to it later ;-) YUM. I didn't have half and half, only had regular canned corn, fresh green chiles and no tomatoes. First, I made a stock using 6 chicken thighs and a bit of salt. I just filled a pan 3/4 of the way with water, put the thighs in, doused in salt, and simmered for about an hour. I put the chicken on a cutting board to cool and poured the stock into a cup 'til I needed it. Then I browned the onion/garlic and put the chicken in when that was almost done. Poured two cups of stock over that, and the cumin. Simmered that for a few minutes, then poured one cup of milk (didn't have half and half, so more stock + some milk). Added everything else (regular corn and no bouillon or tomatoes, as I said before) and simmered for a while. Then I tossed in some cream cheese and used cheddar instead of montey jack, and melted the cheese. It tasted wonderful hot off the stove, but I think it was better after it got cold. Yum.

Easy Mexican Casserole

This was pretty good. Just finished eating it and didn't mind eating it. I also didn't LOVE eating it. It was better than just "ok" but it wasn't spectacular. I didn't follow the reviews to use taco seasoning or onions, and it may have added the "jazz" if I'd have done that. Hubby is in there picking at the pan, though. Guess HE liked it :-)

Roast Sticky Chicken-Rotisserie Style

I didn't have any cayenne pepper or onion powder. Instead, I rubbed a tsp of hot sauce on the rinsed bird and then rubbed the seasoning mix atop that. Placed some onion slices on the top, and shoved into the oven. Didn't marinate, and it turned out DELICIOUS. Next time I'll try marinating, but I just didn't have the time. So if you're hesitant to try this because of the addt'l time, don't worry about it! Per another review, I made gravy using the fat drippings and a can of chicken broth (used flour instead of corn starch), and it was AMAZING. Made a stunning dinner.

Melt - In - Your - Mouth Shortbread

I cannot believe how good these are! My 3 year old has been wanting to have a tea party with cookies (she got the idea from a cartoon), and I wanted to find the simplest, quickest recipe I could. I can't believe the one I found I actually LIKE. These are delicious. I whipped the butter for what feels FOREVER (my daughter didn't want to stop). I'm sure that helped. I followed the recipe as is, and YUM!

Super Sausage Gravy

I love, love, LOVE how easy this was! I must've looked at 5-6 recipes that had TONS of unnecessary ingredients, and when I was about to give up, I found this one! Now, I typically find a way to screw up gravy (it's just not in me!), but this turned out deliciously! And I can't wait til my hubby wakes up so I can serve it to him for his Father's Day breakfast! I paired this with the biscuits from the Good Housekeeping cookbook. Delish!

Corn Dogs

My almost 3 year old has been asking for corn dogs for a long time. Instead of going and buying the frozen kind, I figured I'd make them. These were fabulous! I made sure mine were dry, and the oil was hot enough that I didn't have to dip them in the corn starch before coating. They were so good my daughter took a bite and said, "yum. good job!" :-) can't beat that!

Cowboy Oatmeal Cookies

These turned out fine. I took my vanilla out of the pantry to add it, but I don't think I did. lol. So maybe next time I'll remember, and they'll be as incredible as everyone says! But they were delicious even without the vanilla, so if you don't have it, don't worry!

Hamburger Stew

This is an "all right" stew... i added a little less water than called for, and it ended up tasting sorta like the chili I make in my crock pot. It's not bad, but it's not very stew-like.

Ground Beef Mexican Style

i took everyone's advice and added taco seasoning, but I felt it was a little TOO flavorful with that in addition to the onions, salsa, sour cream and cheese. So I think next time I'll use half of the packet I used macaroni noodles, too (because i don't like the texture of egg noodles) and it turned out great! I think I'll use the other advice and try it with rice next time.

Mini Cheesecakes II

I wish I could give this more than five stars. When I started out looking for a cheesecake recipe, I wanted a WHOLE CHEESECAKE, but this is SO much better! I made these for my husband's birthday, and they were to DIE for! Usually, if there is more than one bad review, I'll expect the worst when I try a recipe, but these turned out perfectly. I like a thick "crust" though, and the first batch i tried didn't allow that. I just scooped the graham crackers directly on the bottom, and only what was sticking to the cheesecake stayed. The rest sat in the muffin liners. Since that didn't work at first, I just made a whole graham cracker crust recipe, and scooped large portions into the muffin liners. It was perfect.
