Pecan Fudge Pie

Chuck's Favorite Mac and Cheese

Delicious and very easy! I added some extra Monterrey Jack and didn't have enough cottage cheese...but it's one of those recipes that's very forgiving. I also added garlic powder, pepper and a generous splash of milk. I sprinkled the top with Panko crumbs and fresh grated Parm then just broiled for a few minutes to get it browned up a little.

Szechwan Shrimp

Wonderful! I tripled the sauce and used 1 lb shrimp and 2 heads fresh broccolli. Served it over Onion Rice and had a fabulous meal.

Onion Rice

Very easy & delicious. I only used 1/2 tsp pepper. I would suggest starting with that and you can always add more if desired. I also used a mix of white and brown rice. Served with Szechwan Shrimp from this site and it was awesome.

Too Much Chocolate Cake

Absolutely delicious and held together wonderfully even though it was very moist. Wonderful warm ala mode. The mini chocolate chips melted and made it even more fabulous. I didn't have chocolate pudding so I used a cheesecake pudding - I'm sure anything would work. Used sugar free pudding and lite sour cream.

Easy Beer Bread Mix

Very tasty! I used honey lager and substituted wheat flour for the white. I also left out the baking powder as someone else suggested, but will try leaving it in next time to see what difference it makes. The spices were not overwhelming at all but just added a subtle flavoring. I used Mrs. Dash Italian flavored. Will try again and leave out the spices and add some honey to the butter before pouring it over the top.

Tex-Mex Turkey Soup

This was the BEST soup I've ever made. I Increased the cumin to 1 tsp and omitted the oregano and tomato soup. Instead of the salsa, I added a can of green enchilada sauce (medium hot) and I only used a 15 oz can of chopped tomatoes (used a can with Mexican spices added). Sprinkled crushed tortilla chips and cheese on top and it was DELCIOUS! Can't wait for lunchtime!

Spinach Brownies

These are great both warm or cold! If you use frozen spinach, only use a 10 oz package and do NOT cook. Unnecessary step. I sauteed 1/2 diced onion and 1/2 diced red pepper in a small amount of olive oil and added a clove of garlic. I only used 2 T butter in the recipe and that was plenty. I used swiss cheese instead of mozzarella and then sprinled with grated parmesan about 10 minutes before it came out of the oven. Also used an 8 x 11 pan to make the squares a little thicker. Wonderful!

Caramel Apple Dip

This was an easy and delicious dip. I used just about 2T water so it was a little thicker. Can also be used as an ice cream topping. I made an apple cake topped with ice cream and this sauce and it was fabulous!

Old Bay® Shrimp Fest

This recipe was awesome. I used baby red potatoes but I think next time I would use larger potatoes and halve or quarter so they would season up a little better. Will also add a little additional Old Bay next time around.

Jamie's Cranberry Spinach Salad

This was a fabulous recipe. Based on other suggestions, I used less sugar and did not use all of the dressing when tossing. I also used toasted pine nuts and added some fresh pear slices and feta cheese. Great blend of flavors!
