About this Cook
Well I was born a Yankee, but that was a mistake. I am all Southern Gal at heart and everything that exemplifies.
My favorite things to cook
I can and do cook just about anything. However, I love those deep down south comfort foods and desserts. They are my passion. I do try to lighten them when possible, so my family will eat healthier then the generations of the past.
My favorite family cooking traditions
Everything we do is around food. I BBQ. My husband may not touch my grill. It is like my stove, off limits unless it is a special romantic occasion he has concocted.
My cooking tragedies
There have been many, but my most remaralbe was my 1st Thanksgiving Turkey. I forgot to brown the turkey 1st, covered it in cornbread dressing. The result was a very wet dressing and a turkey that did not looked cooked.

Spinach and Strawberry Salad
This salad is amazing. NOW to make a good thing better (healthier) I sub the Vegetable oil with EVOO and eliminate the sugar. I use Stevia or Splenda or whatever sweetener. I added 4 oz. grilled chicken and sliced almonds for texture and had an amazing meal with 353 calories, 7 carbs, 21 g of fat(3sat)35g protein 184mg of sodium... Thanks for this easy recipe. Brought it to work and everyone loved it!-- Next time I may half the oil like suggested. We had a bit of dressing left over.

Asparagus and Mozzarella Stuffed Chicken Breasts
You could skip the bread comes and instead combine 1/4 c. light mayo and 1/8 c. parmesan cheese. Spread evenly over the top side of the chicken breast. Last 3-4 minutes set oven to broil and DELISH. (rating based on recipe as is with no modifications.)
