White Chicken Enchilada Slow-Cooker Casserole

I like trying out recipes on unsuspecting friends. I made this for an office luncheon, and it turned out well. I did follow others' suggestions to add some spice to chicken meat, and also added some black beans and corn. It made a lot!! I used 9 chicken breast halves instead of thighs.

Banana Snack Cake

Very tasty. Felt like baking so I made this and took it to work. Subbed Crisco for the butter (just wanted to use up some baking sticks), and also used milk with lime juice, pecans, and milk chocolate chips instead of the listed ingredients. My guinea pigs (co-workers) enjoyed it and I was even asked for the recipe.

The Best Chocolate Cake You Ever Ate

This is like a thick Texas Sheet Cake. I had to add 10 minutes to the baking time--it was still a soupy mess at 20 minutes. I am making it for a coworker who's celebrating a birthday so we'll see how quickly it's eaten tomorrow.

World's Best Lasagna

CAUTION: As is, should be called "World's SALTIEST Lasagna!" The 1 T. of salt MUST be an error! Please don't make the mistake I did by following the recipe. It was nearly inedible! Even so, I did not give it a poor rating because it has potential--just delete the salt!

Cop Cobbler

This is almost identical to Paula Deen's "Krispy Kreme Bread Pudding" recipe. Not that there's anything wrong with that! I love the name, and love the cobbler/bread pudding even more.

Butterscotch Bread Pudding

It was as good as everyone said it was. I hated to leave the uneaten portion at our host's home when we left, but it would have been too tacky to reclaim it. I probably added more butterscotch morsels than it called for (entire 12 oz. bag), and I used light brown sugar and sprinkled top with pecans. Fabulous!

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

These were fabulous! I made them for an office baby shower and got rave reviews. I am embarrassed to admit I used store-bought cookie dough, cake mix (Devil's Food), and canned chocolate frosting. Covered the top with chocolate shavings and garnished with those cute pacifiers made with Lifesavers and jelly beans. Not as quite as pretty as the photo, but plenty good, quick, and easy.

Chocolate Cobbler

If you've ever had "Chocolate Stuff" at that famous St. Simon's restaurant (that now has spin-offs in Fernandina, Ponte Vedra, and Palm Coast), you will be pleased to know that this comes very close to being it's copy-cat!!!

Fluffy Lemonade Gelatin

This was very good and very light! I served it for dessert on Easter, using cute egg-shaped baskets. It did separate a little--maybe I should have allowed the gelatin to get a little firmer before adding whipped topping. Used sugar-free gelatin and "free" cool whip.

Roasted Asparagus and Yellow Pepper Salad

I roasted other vegetables too, and mixed everything with the dressing. Dressing was kind of spicy! Maybe I used more than a teaspoon of hot sauce? Very good, though.

Stuffed Leg of Lamb with Balsamic-Fig-Basil Sauce

OMG!! This was absolutely fantastic! The sauce was incredibly easy and will be made again to use on other meats, like pork. The lamb itself ended up well-done. I should have monitored meat thermometer closer, but we enjoyed it tremendously.

Wasabi Mayo Salmon

This was great! My new fave salmon recipe! I used a combination of fat free and reduced fat mayo, and lots of wasabi (paste and powder). Love that wasabi rush! Wish I could think of a good reduced fat substitute for the crushed potato chips but we enjoyed them as it was. I did use a little less than called for.

Yummy Blueberry Cobbler

My family LOVED this recipe! I did add a little less sugar than it called for, as well as 4 T. MARGARINE and 3/4 c. SKIM milk but it was excellent. The boiling water step is unusual but why question what works?

Jacob's Coat Casserole

This isn't GOURMET, but it is good and is easy to fix. In fact, it is what I usually fix and take to households who have new babies or an illness and need a meal brought in. As another reviewer noted, it should be called "Joseph's Coat Casserole." See Genesis 37:3.

Artichoke Spinach Lasagna

Very disappointing, and I was hopeful, too. I basically followed the recipe with a few minor changes and was excited that it would be considered a "core" meal for WW purposes (with my minor changes). I guess there are some recipes that do not benefit from calorie and fat reduction, and this was one of them. I even added mushrooms and a layer of FF ricotta. Oh well.

Awesome Carrot Cake with Cream Cheese Frosting

I made THIS recipe because I wanted to use a 9x13 pan. It was good BUT it is NOT good for you and it takes about 60 minutes to bake (20 minutes LONGER than recipe states). Notwithstanding, everyone raved over it and then went home and doubled-up on their cholesterol medicine.

Pralines, Coffee and Cream Cake

The praline topping and frosting were YUM, but the cake had a VERY strong Kahlua flavor, which isn't desirable to some guests.
