Squasage (Sausage-stuffed Squash)

This is amazing! The only thing I have started doing differently is when I scoop out all the squash, I mix it up in a bowl then put it into a cast iron skillet to bake off. Oh and I will interchange nonfat greek yogurt for the sour cream too. I think it changes a little each time I make it, but I always seem to mangle my squash skins while scooping. Enjoy!

Stuffed Acorn Squash

Did what a couple other reviewers did and mixed up the stuffing prior to stuffing the squash, omitted the sugar (we like only slightly sweet) added some cooked sausage & uncovered for the last 20 of baking. I also topped mine with feta. Yum!

Slow Cooker Pernil Pork

This was amazing! I had a larger roast (4.5 #) than it called for so I upped the cumin, oregano (used dried), chili pepper, & salt by half. I also let it sit in the fridge overnight with the paste on it and then cooked it on low for 11 hours. Everyone loved it! Thanks for the recipe!

Roasted Beets with Feta

Rave review for this one. Everyone loved it. Something came up and my steak marinated for 2-3 days, WOW was it good. I did add some swiss chard to the filling because I had it on hand.

Quinoa with Asian Flavors

This was so good. Made it to sub for rice under an "asian" chicken I made. Rave reviews from the testers! I did rinse quinoa first then used sesame and olive oil to toast. I also did not have any green onion on hand so I added some dried onion flakes and it did well. AND I used reduced salt chicken broth, I would not use regular with the soy. I will be making this often.

Split Pea Soup with Rosemary

This is a great recipe. I am the "soup chef" for my cafe and this sells out almost every time. I omit the leeks, use a chicken stock base and dried rosemary. My family enjoys it as well. (I have never been a split pea soup fan but this stuff ROCKS)! ENJOY!
