Soft Sandwich Buns

Reviewed: Jan. 25, 2010
it's my favorite buns recipe now. I don't have a bread machine or a mixer or even a biscuit cutter , I used instant yeast (to save more time )and I just mixed all the ingredients in the bowl and then I kneaded the dough on a lightly floured surface until smooth and elastic then I Placed the dough into a well oiled bowl, and covered with a cloth. Let the dough rise until double; this should take about 45 min. I made 10 large buns by Dividing the dough into 10 equal pieces. Shape into smooth balls, and place on a greased baking sheet. Flatten slightly and brush with melted butter. Cover, and let rise for 30 minutes.

Egyptian Feta Cheese Omelet Roll

Reviewed: Aug. 19, 2009
I made it for my lunch today and it was pretty good. I made the following modifications: I doubled the amount of feta cheese(coz I`m a huge fan of it), added a pinch of cumin + dried parsely to the egg mixture and a few drops of hot sauce to the omelet.

Moroccan Meat Cigars

Reviewed: Aug. 28, 2009
I make these at least once a week coz my husband keeps asking for them all the time. I do the folowing changes: 1- before adding the ground beef to the skillet I add 1/4 cup chopped onion and stir them in the EVO until golden brown then I add the ground beef. 2- I use fresh chopped roma tomato instead of crushed tomatoes . 3- I add back pepper + clove of garlic and dried parsley just right before turning the heat off. 4- I brush them with real melted butter

Grandma's Fresh Apple Cake

Reviewed: Apr. 22, 2008
it was my first time at all to bake a cake from a scrach ,and it was yummmmmmmmmy . I made it all with just apple and I added 1/2 tsb of vanilla, I found the sugar is too much for me so I used just 1/2 cup and may be I`ll reduce it the second time as long as the apple is full of sugar.

Master Pizza Dough

Reviewed: Jan. 12, 2012
this is the only pizza dough recipe I'm using now , the crust is chewy in the middle and crispy from the outside . the only change I make is to let the dough rise for 30 min , I use air bake pizza pan which makes the bottom crispy , but in my oven it take only 15 mins . try it with " Exquisite Pizza Sauce" recipe from this site it's my favorite one . if U make pizza and bread more frequently like me try to buy the rapid yeast from a whole club sale like Sam's club , Costco and Smart and final it's a large package but it's way cheaper , just keep it in the fridge after opening . one envelope of yeast= 2+1/8 teaspoon of yeast from the large package.

Tabbouleh II

Reviewed: Apr. 24, 2012
Tabouleh is perfect with any middle eastern dishes. I have noticed there are two kinds of Bulgur : coarse and fine , and I think the boiling water is supposed to be for the coarse one . I always use the fine Bulgur and I just soak it in water for less than 20 minutes . I use green onion instead of white onion, I cut the head and the steams. I also like to add black pepper

Chocolate Muffins

Reviewed: Jan. 8, 2012
I think people gave it a good ratings because they added too much chocolate chip so they didn't notice the taste or the texture of the muffins. I added more cocoa powder as recommended (3/4 )and reduced the flour to (2 1/4) , it wasn't chocolaty enough besides it wasn't very moist , just dense . any way if you are looking for a bakery style muffins this is not the right recipe for you .

Vegan-Friendly Falafel

Reviewed: Dec. 17, 2009
this one is very close to the real falafel that I used to have . I did`t add any potato , used baking powder coz I found the baking soda makes the falafel more greasy, and as my mother used to do I added parsley (which is supposed to be the basic herb ingredient in falafel)+ cilantro + dill and I add more garlic : up to 7 cloves , 1 and some times 2 eggs(to hold the mixture and to make it fluffy), 1 tsb dried mint will make a great flavor ,some times I add green onions and I doubled the amount of cumin . if U have a meat grinder use it , I believe it makes the texture much better than the food processor. in Egypt they use peeled fava beans not garbanzo beans (but it`s hard to find in USA)and they sprinkle the falafel with sesame seeds after forming it in to balls. thanks for sharing this amazing recipe
