Coconut Pancakes

For starters the proportions are waaay off. I ended up adding an extra cup of milk and it still wouldn't spread at all . . . so I'm standing there trying to spread out the pancake playdough and then when I try to flip it of course it falls apart. The basic idea of milk, butter, eggs, coconut flour and rice flour might still work, but this one didn't work for me.

Healthier Southern Peach Cobbler

I liked the syrup. It wasn't overly sweet and that let the peach stand out, but my family was disappointed in the crust. There wasn't much and it wasn't very crispy. Next time I'm going to try a more traditional topping but I'll probably do the filling the same.

Delicious Greens and Ham

I really liked it. I did use just one tbs vinegar and didn't include the tomatoes since my hubby doesn't like them (although I think they would be good with them too).

Apple Banana Cupcakes

I could wish for a more banana taste, so I might add more next time, but delicious. Chop if you want chunks of apple, it just depends on the texture you're going for.

Chicken Cordon Bleu II

After making it with and without the wine, I can say that that the wine makes a difference! Even if it's just the cheap stuff. Yes, you can substitute chicken broth, but the flavor is simply not as good, even with homemade boiled down broth. To make up for it I tossed in a piece of ham for flavor, some better-than-bouillon beef flavor and a little cream cheese (basically whatever I had on hand). We don't drink, but I normally keep a little cooking wine on hand and by the time you've boiled it for 30min the alcohol will be completely gone leaving a delicious flavor behind. Yum!

Grilled Cheese Sandwich

The classics are the best :) But I couldn't believe that no one mentioned adding ham! Leftover or sliced taste wonderful with the cheese. Also, I've heard that you can put a bowl over the sandwich while it's heating in the pan to make sure that the cheese melts, but I just top one side with cheese and stick it in the microwave :)

Lighter Chocolate Chip Pancakes

I'm giving it 4 stars instead of 5 because the baking powder was a bit much, but my husband can't taste it and he liked it. The only other change I'd make is to add a tsp of vanilla.

Whole Grain Pancakes

I give these 5 stars because they're healthy and my husband will eat them. The first time I made them I didn't have flaxseed meal and they came out liquidy and super flat even with a little extra flour, but I liked the flavor and my little 10 year old cousin said they were good. This time I found that adding flaxseed meal made it the perfect consistency for me and they were less flat. I still wouldn't call them "fluffy" (maybe I mixed them too much?), but my dad said that with wheat pancakes whipping the egg whites until they're stiff and then folding them in helps so I'll try that next time. Oh, salt and vanilla are a must, and I used lemon and milk instead of butter milk.

Men Love This Steak

We had it without the cheese since neither of us are big fans (and I didn't have any in the house). It tasted great. I added onions to the original recipe and made the Dijon mustard. My husband loved the bacon addition.

Roast Sticky Chicken-Rotisserie Style

I follow the recipe exactly except for omitting the cayenne pepper, but the next day I simply didn't have enough time to leave it in the oven for several hours so I butterflied the chicken (following some web videos) and then roasted it above potatoes for 45 minutes at 475 and put a foil tent over it for 15 minutes after I pulled it from the oven. Delicious!! The breast was slightly more cooked than the thighs, but still fairly moist. The thighs were pretty close to heavenly. I also put the potatoes back in the oven for crispiness and my husband loved them.
