After making it with and without the wine, I can say that that the wine makes a difference! Even if it's just the cheap stuff. Yes, you can substitute chicken broth, but the flavor is simply not as good, even with homemade boiled down broth. To make up for it I tossed in a piece of ham for flavor, some better-than-bouillon beef flavor and a little cream cheese (basically whatever I had on hand). We don't drink, but I normally keep a little cooking wine on hand and by the time you've boiled it for 30min the alcohol will be completely gone leaving a delicious flavor behind. Yum!
