Pistachio Crusted Chicken

I found this recipe a bit bland and kinda boring-I think my taste runs a little more on the exotic side however,my guy loved it. I hope this helps someone.

Canadian Butter Tarts

I went thru this site and picked a few recipes that sounded good but were all slightly different so every christmas I could try a new recipe. So far, I have made this recipe 3 times.(and I just got it this past Christmas) My mouth is watering just writing about them!

Strawberry Freezer Jam

I attempted this recipe twice. The first time I used 3 cups of fruit and because it seemed like way to much sugar I cut back. I guess this was a mistake because it didn't set. So, back to the pot where I added the missing sugar and sure enough it set nicely. I also made another batch with splenda and the special pectin for low cal. recipes. It also set properly. However, I think it's way too much sugar. I don't remember the ratio's but, this freezer jam was so fresh tasting and because I used fructose it didn't require as much sweetner plus it has the added benefit of being hypoglycemic friendly as it doesn't put as much stress on the pancreas to produce insulin. (or so I read)

Mom's Best Peanut Brittle

Just finished making my very first batch of Mom's!Seems to be a raving success as I used every suggestion.I actually started out using another recipe and decided to check allrecipes for helpful hints and lo and behold here I am! My recipe was a bit larger and I used pecans but, it didn't included salt and it didn't offer advice about how long it took to heat up initially(I thought my thermometer was broken at first)and yes,after 250 degrees it does shoot up fast. I made sure to really watch and not stir overly much at the end. I had everything premeasured ready to pour and stir. I also used over a teaspoon of butter to grease the pan(warm)so the brittle spread all by itself as I poured. I am writing this as I wait for it to cool so I can have some. I broke of some off the wooden spoon I used. Delicious! Now I need to know how do I clean this pot?!!!
