Johnny's Spice Rub

Thanks Johnny! We made this to rub on a full size pork loin for our sons first birthday party. We wanted something different to impress the family and friends at the party, and this sure did! We did make one change since we had no oregano we used Mrs. Dash garlic and herb seasoning. This recipe was so delicious it gave the pork the perfect flavor. We will definitely use this recipe again!

Zippy Summer Shrimp

These were very good! Quick and easy! Only made substitution of lime juice for the lemon. These were really delicious leftover cold on top of a salad!

Homemade Black Bean Veggie Burgers

Delicious! I baked instead of grilling and did not put anything in the food processor, rather I finely chopped the peppers, used onion powder instead of fresh onion and used pre-minced garlic. These are a perfect addition to my "Meatless Monday" recipe list!

PHILLY Creamy Basil and Red Pepper Pasta

I used whole wheat spaghetti instead of penne. I substituted Neufchatel for the cream cheese and used half and half instead of skim milk. This pasta was delicious! Next time I will for sure add a bit more liquid as it was more dry than I would have liked. Also, I did not blend in the food processor, I simply finely chopped the peppers and combined everything by hand. Will make again for sure!

Tortilla Rollups II

Brought these to work for our Halloween luncheon. Made exactly as written with the exception of using Burrito size Tortillas. This made three wraps which I cut into about 24 small rolls. These were a hit and were gone in about 5 minutes! Definitely a keeper!

Scrambled Egg Muffins

These are excellent!!!! I made a split batch of these doing 6 ham/green pepper/cheddar and 6 bacon/jalapeno/cheddar. I placed in individual ziploc bags and placed in the freezer. I pop them in the microwave for 1 minute wrapped in a paper towel and they turn out wonderful! What a great on the go breakfast! I love the change up from my usual Oatmeal or Bagel! Thanks!

Avocado Salad with Bacon and Sour Cream

I made this as a side dish for Chicken Enchiladas. Delicious and refreshing, just as the recipe poster suggested! Will definitely make the rounds with other south of the border inspired dishes.

Italian Breaded Pork Chops

Yummy! Made a couple changes for what I had on hand. I used Italian Seasoning in place of the dried parsley. I also added garlic powder to the bread crumb mixture as I did not brown them in the skillet first. Instead of browning them then baking, I allowed butter to melt in my glass baking dish in the pre-heated oven and then placed my chops in it. I used 6 medium sized bone-in chops and they came out perfect! Delicious! Will definitely be using this recipe in my regular rotation from here on out. Thanks!

Honey-Mustard Salad Dressing

Delicious! Substituted Dijon for yellow mustard, organic cider vinegar for the white, onion powder for fresh onion, olive oil for the veggie and dry parsley for fresh. I put this on a baby spinach salad with hard boiled eggs and bacon. YUM!!!! Will definitely keep this in the fridge!

Broiled Tilapia Parmesan

This was delicious! I was trying to find something that would compare to a parmesan crusted fish I had at the beach last summer, and this was very close. I used flounder b/c that is what i had in the freezer. I think this recipe is so versatile it would be good with quite a few types of fish. I also had no lemon juice, but it was fine without it in our opinion. Hubby absolutely loved this recipe so I think it will be a keeper in our house. I served it with parmesan noodles and steamed broccoli. Awesome, thanks for sharing!

Clam Sauce with Linguine

Absolutely delicious! Thanks so much for sharing. We enjoyed this recipe for a few days as we made a lot for just the two of us... The only change we made was using parsley that comes in a tube in our produce section. Very handy as it doesn't go bad for a few months after opening unlike fresh parsley.

Meatloaf With A Bite

This was a very good makeover for regular old meatloaf! I made a few changes based purely on what I had available in the pantry to make this... I used canned tomatoes with green chiles instead of salsa and bread crumbs in place of the saltines. We will definitely be making this recipe in the future. My husband had the leftovers wrapped in a tortilla with lettuce and sour cream the next day and loved it just as much! Thanks for sharing!

Jalapeno Popper Spread

I make this recipe as directed, with the exception that after heating I allow it to cool down and put it into the fridge. We prefer it cold! The contrast of the cold cream cheese mixture to the spicy/hot peppers is amazing! Will be using this party hit for a long time! Thanks!

Cake Mix Cookies VIII

This is a recipe I will be using for a long time! I made 2 seperate batches, one was devils food cake mix with Andes mint baking chips and the second was chocolate fudge cake mix with shredded coconut. I did not add oil as others suggested and they were perfectly moist. The mint ones were divine! The coconut ones however left something to be desired. I will definitely be making these for get togethers and so on in the near future. I look forward to taking this basic recipe and changing it up many different ways! Thanks!

Grilled Mahi Mahi

Great recipe! I pretty much followed the recipe exactly as written. I only made 4 Mahi filets and left them whole. Used white tequila instead of wine as another reviewer had suggested. What a great recipe. We grilled them in a pan as written then mixed them with cooked spaghetti noodles and added Colby/jack on top. We then broiled it until the cheese melted. Very delicious meal! Will definitely be adding to our regular list of meal options. I always keep mahi filets in the freezer, so this is a keeper. Thank you!

Rosemary Ranch Chicken Kabobs

What a simple yet AMAZING marinade! I used all the ingredients with the exception of the rosemary (which I had none of and replaced with Mrs. Dash Garlic and Herb seasoning) and the white vinegar (which I replaced with Red wine vinegar infused with garlic.) I marinated them for 3-4 hours and I think that made them so perfect.They were awesome! So moist and tasty! My hubby is not a big fan of kabobs of any sort yet he has already requested these again! I think this time I will take some others advice and add some veggies (mushrooms, onions, peppers) in with the marinade. This recipe is a keeper for sure! Update: The second time I made these they were just as perfect as the first, even my extremely picky brother-in-law loved them. I made a second batch of marinade using half the amount of each ingredient and placed in it baby bella mushrooms and green pepper chunks. Amazing! Use this recipe!

Slow Cooker Beef Vegetable Soup

Very good recipe. Next time I think I may marinate the meat or brown it with seasoning first as it was a bit bland. Veggies all tasted great though! I did add Beef broth instead of water for extra flavorand a can of white kidney beans. Will definitely make this again as it is a very versatile recipe.

Hot Mexican Spinach Dip

We thought this was a great base recipe that we could play with and make changes to. We used Rotel original instead of salsa to give it a bit more bite which was great. We changed the cheese to colby/jack b/c we had it on hand already, and used regular milk instead of evaporated. We did not add the vinegar at all and used the olives only as a garnish. I will say be sure to dry the spinach thoroughly, I used paper towels to soak up excess moisture, so it isn't too runny. I microwaved it for about 6 minutes instead of baking b/c of lack of time and it turned out perfect! We will definitely be making this again as it was a crowd pleaser for Sunday football games! Thanks!

Pasta with Asparagus

Very good dish! I used Baby Bella Mushrooms and added a bit of white cooking wine with the chicken broth. I also used fresh grated parmesan. Will make again sometime!
