Chocolate Chip Banana Bread II

I must add my kudos for this recipe! I absolutely loved it. Even my boyfriend, who insists he has the *best* banana bread recipe, agreed that this was the best he had tasted. I followed some of the suggestions from other reviewers - I used butter instead of shortening, used 1/2 brown sugar and 1/2 white, added 1 tsp. of vanilla and substituted fat free sour cream for the mayonnaise. I also doubled the chocolate chips, and added them to the dry ingredients so they wouldn't sink to the bottom of the loaf. I also cut the recipe in half to make one loaf, and it worked out just fine. The result was fantastic - I will definitely be making this one again.

Apple Pie Muffins

I loved these muffins. I took them with me to a cottage for a weekend away with some new friends, and they were an instant hit. The crumbled mixture on top makes these much better than your average muffin.

Blackberry Cobbler

Yum, yum, yum!! I have never made a cobbler before, and I had some blackberries that I needed to use up. I am thrilled with how this turned out! I found it a bit challenging to roll the dough - mine was a bit dry (as others have said), so it crumbled when I tried to make my jelly roll, and when I tried to slice it. But I managed to get it all in the pan and into the over. The end result is beautiful!! I even threw in a few leftover blueberries that had in the fridge. I can't wait to serve it to my husband tonight for dessert!

Earthquake Cookies

Not bad - 5* for simplicity, but like someone else said, I have tasted better home made cookies. However, we took these out to the lake with us for a day, and the kids loved them! I used a DH Devil's Food mix, and threw in about a cup of milk chocolate chips to jazz them up a bit.

Chef John's Macaroni and Cheese

Great recipe! I followed Chef John's suggestion for semi-cheesy mac and used 12 oz. of macaroni. It is still INCREDIBLY cheezy, and I may go up to the 16 oz. next time. I used old/sharp cheddar and gruyere, and it came out beautifully. I can't wait to have more for lunch today!

Creamy Cilantro Chicken with a Kick

Excellent dish, and a great way to use up leftover cilantro. I read through the reviews before starting, and decided to double the sauce recipe. I doubled everything except the serranos and the chicken. The result was a very flavourful dish with just the right amount of kick! I used boneless chicken breast cut into 1-inch chunks, threaded them onto skewers and grilled them on the BBQ. The result was fantastic! We will definitely be making this again.

Aunt Norma's Rhubarb Muffins

Very nice! I made only a few small modifications to the recipe. First, I followed another reviewer's suggestion and added 1.5 tsp. of baking powder for nice, fluffy muffins. I also added a healthy shake of cinnamon to the dry ingredients - it just seemed like the right thing to do! They turned out great - just the right amount of sweetness for the tart rhubarb, especially with the topping. Thanks!
