Very Easy Crab Dip

This is very delicious. You can make it as described or you can just spread the cream cheese on a serving plate, top with crab (real or surimi imitation) and pour the cocktail sauce over and use sturdy crackers to scoop it up.

Vietnamese Salad Rolls

Zucchini Sticks

This is a tasty treat. I don't deep fry it though, I just cover the bottom of a skillet with oil and turn the zucchini over after the first side is browned. Mix some grated parmesan in with the crumbs for extra flavor. You can also make round slices instead of strips.

BLT Salad

Took this to a 4th of July potluck where there were a lot of other salads and quite a lot of it got eaten up, so it must have been liked. I thought the dressing was excellent though 1 teaspoon of garlic powder is WAY too much for my taste. I used 1/4 teaspoon of garlic powder along with a couple of teaspoons of minced dried onions. With all the reviews saying the salad got soggy fast, I left out the majority of the milk in the dressing, using about 2 tablespoons and substituted sour cream for the rest. I also seeded my tomatoes before chopping them. My only complaint, and I think it is my fault, is that there was too much lettuce so you really didn't get much of a taste of the bacon and tomato in each bite. I had scaled all of the ingredients for a batch and a half of the dressing and bacon but I used two heads of romaine. Next time I'll use less lettuce.

Asparagus Parmesan

Hmmm... reading reviews people said 3/4 TSP of cheese was not enough but the recipe I see calls for 3/4 CUP of parmesan, which seemed like too much! So I just sprinkled till it looked right which came out to probably around 1/3 cup. I also put 1/2 tsp of chopped garlic in the butter and oil and squirted the juice of 1/2 a lemon over the asparagus before adding the cheese.

Apple Spice Rice

This is a nice side dish. No fireworks or drama, just a very good accompaniment to a main course. I had a yellow sweet bell pepper in the fridge that needed to be used so I added about 1/2 cup of it diced to the rest of the ingredients that got sauteed. I have had a similar dish at a restaurant where they add some slivered almonds to the rice as well.

Macaroni Salad

Being concerned about raw eggs I just used more mayonnaise instead of the egg for the dressing so I'm not sure my review counts. This is a good, basic macaroni salad the way I made it, though the pasta tends to soak up all the dressing and you then have to add more.

Creamy Au Gratin Potatoes

This is so good! I wish I could eat it all the time! It never comes out curdled. Be sure to use pan spray on your dish or you'll be soaking it a long time to get it clean.

Corned Beef and Cabbage I

I wish my husband liked corned beef because this was a great recipe and I'd like to make it more often. Putting the cabbage in right at the end is such an improvement on my Mom's technique of cooking it the whole time the meat cooks (yuck!).

Chocolate Strawberry Shortcake

I think some of the people who were not happy with this recipe might be confused about what "shortcake" is. Maybe they were expecting "cake". Shortcake is supposed to be more like a biscuit or scone. I think this is a really good recipe, though you're doing it a big disservice if you use frozen whipped topping instead of real whipped cream on top!

Applesauce

Homemade applesauce is SO good. It's great for using up apples that are going soft. Sometimes I skip the food mill and leave it chunky. Great warm!

Cream of Mushroom Soup II

I like this because you don't puree the mushrooms, leaving nice pieces in the soup. I used chicken broth rather than vegetable and added an extra tablespoon of flour for a thicker soup.

Cream of Broccoli Soup I

This is a good soup and pretty much what I think cream of broccoli should be. The onion needs to saute longer than 4 minutes in order not to overpower the soup with sharp onion taste though. I used canned chicken broth instead of water and chicken bouillon.

Clam Chowder Canadian Military Style

Excellent recipe. The only thing I do differently is to cook a few strips of diced bacon along with the onion and celery and reduce the butter slightly to compensate for the added fat.. I have used regular milk or half and half cream instead of evaporated milk also.

Chili I

This is my basic chili recipe though I have modified it with ideas found in other chili recipes. I add 1/4 teaspoon of allspice, a teaspoon of cumin and 1/2 ounce of unsweetened baking chocolate to the seasonings and I add a small can of tomato sauce along with the diced tomatoes. And I cook it all day in the crock pot. Very good and filling. You can also use browned, cubed pork or beef instead of the ground beef.

Chicken Noodle Soup II
