Spinach Salad with Red Potatoes

Just had this with dinner. I really liked it, while the kids thought it was dry. We doubled the bacon, for extra flavor. Next time, we will make a little more dressing to satisfy the kids.

Strawberry Spinach Salad I

Loved this! It was a nice chance from my typical salad. Next time, I will use 12oz of spinach, and decrease the sugar to 1/3 cup. It was a bit too sweet, with a bit too much dressing for my taste. Update: I tried making this using Splenda instead of sugar. It tasted just as good!

Busy Day Barbeque Brisket

This was excellent! We put more liquid smoke in than called for, and it did not overpower the meat. In fact, i would have preferred it slightly smokier. Next time, I will put less cayenne in, as it was too spicy for my 7 year old.

Roasted Brussels Sprouts

Our whole family enjoyed these! When prepping, save the little leaves that fall off and cook them with the rest. That was our 5 year old's favorite part because they become crispy little 'chips.'

Slow Cooker Split Pea Sausage Soup

This was just ok. It didn't taste bad, but it was very bland. If you like food with lots of flavor, this is not your recipe. Adding some salt, more garlic powder, and some cayenne pepper helped a little. Decreasing the water to 8 cups still made for a fairly runny soup. If I try this again, I will be using 6-7 cups. Also, I think slightly fying up the sausage before adding to the soup would help. The sausage was almost like a soggy hot dog. Not bad, just not the best.

Curried Coconut Chicken

I thought this was really good. I only used 2tbsp of sugar as some suggested it was too sweet. I also added some cornstarch to thicken up the sauce. It was a little bland, so I added some cayenne pepper as well. For me, there wasn't quite enough curry to satisfy my curry craving! Overall, it was easy to make and needed very little tweaking.
