Nanaimo Bars III

I have loved Nanaimo bars since visiting my MIL a few years back when she had some that she had received as a gift. They were so good, that I finally set about making my own. I followed this recipe exactly, though I did double the chocolate topping layer as it didn't seem like enough to spread around. My kids loved it and we will be giving it to our neighbors as part of a holiday cookie gift.

Baked Oatmeal II

This was fantastic and hit the spot on a cold winter morning. It is 5 stars based on the modifications I made after reading tips from other reviewers. We have relatives coming soon and it will definitely be on the breakfast menu list! **Serve with warm milk.** I made the following changes: I subbed 3/4 c. frozen mixed berries for the cranberries, I reduced the brown sugar to 1/3 c., I subbed 1/2 c. applesauce for the 1/2 c. butter, I added 1 tsp. butter and I added a dash of nutmeg. Another reviewer suggested measuring out the dry ingredients the night before into a gallon-sized ziploc, which made morning assembly a snap. BLANCHL, thanks for the recipe!

Sour Cream Banana Bread

My family loves banana bread and we are always searching for new recipes. We have a few we always go back to and this will become one of them! Super moist! I see different reviews about cooking times. I had it in the oven for about an hour. I love cinnamon sugar, but I was unsure of it on the bread. It was delicious and crunchy, and even a bit subtle. I will probably also try the recipe without the topping, but it was nice and a bit different. For the one reviewer who gave it one star, saying it was so heavy, I am not sure how they didn't get the right results - I am wondering if he/she skipped the step of beating the sugar & bananas together until they were light and fluffy. Mom's Lasagna

This recipe is fantastic and very easy! My whole family loved it. The only change I made was to use the no boil lasagna noodles. This is the second recipe I tried off this site and the clear winner. I will make this often. Thanks for sharing, Kim Orr!

Blonde Brownies I

I never thought I liked blondies until somebody brought them to a meeting I was in recently - they were still warm and a-mazing. I went on a hunt to find a great recipe and I hit the jackpot with this one. I was a little worried when I put it in the pan - it didn't spread out to all sides at first. With some work, I spread it out, but it seemed quite thin. Maybe that is normal, or maybe I somehow messed up the measurements, because I saw no other comments about that. Regardless, they turned out fantastic and they did fill the pan. The only change I made was to mix the chocolate chips in so it was more like a cookie bar. Next time, I may try to double the recipe but keep in the same size pan. Thanks for the recipe!

Pumpkin Bread IV

Grilled Salmon I

This was so easy! I baked a 2 lb. filet for about 40 minutes at 350 degrees. The salmon was flaky and moist and very tasty. I doubled the recipe as was using 2 lbs., but I think I would use less of the butter/soy sauce next time.

Oatmeal Chocolate Chip Cookies I

Chocolate Chip Banana Bread II

This was delicious. I swapped the shortening for butter as I didn't have shortening, but otherwise followed the ingredients exactly. I followed the advice of another reviewer and put in in a bundt pan but it was too much batter. Next time, I will pour the extra batter into muffin tins. Very delicious and moist.

Shrimp Lemon Pepper Linguini

Hobo Beef and Vegetable Soup

This was really good and hearty! I'll have to use this in Fall and Winter! I did make some subs based on what I had at home today. I used ground turkey and chicken broth instead of beef. I also threw in Mrs. Dash in place of parsley and celery seed. For the tomatoes, I used Trader Joe's fire-roasted diced tomatoes and they provided a nice kick. I also subbed the green beans for frozen spinach, and used only one potato. Next time, I will try with two potatoes, as per recipe. Can't wait to make this again. Super easy! It would go well with warm, crusty bread. Next time!

Strawberry Oatmeal Breakfast Smoothie

This was really good. I used 3/4 skim, 1/4 apple juice in place of soy milk and 1 cup frozen mixed berries as I did not have frozen strawberries. I really liked it. My husband didn't like the texture. I was afraid that my kids wouldn't like it, so for theirs I threw in a squeeze of agave and it was a hit.

Peanut Butter and Banana Smoothie

This was so yummy and refreshing. I doubled it, using frozen bananas, used half the amount of honey, and skim milk instead of soy (don't have soy). Also threw in a smattering of oats, per another reviewer. De-lish! And my 4 year old daughter devoured it! Thanks for the recipe.

Coconut Oatmeal Cookies I

These were amazing! I made them for a friend who said her grandma made her oatmeal coconut cookies. The only change I made was to use heaping teaspoons of the baking soda and powder, based off another reco. that otherwise the cookies come out flat. I may experiment next time with more coconut- based on my friend's feedback. Also, I may cut both sugars back by a 1/4 c. each. They were really sweet. Funnily enough, once they cooled, they didn't seem as sweet as they did right out of the oven. Delicious!

Salmon with Brown Sugar Glaze

Winner, winner salmon dinner. This was delicious and my 4.5 year old son loved it! I followed the ingredients for the recipe exactly, and used two salmon fillets, just shy of a pound. I had to adjust the cooking method, because I tend to overcook things when I broil them. I wrapped the fillets in silver foil, placed them in a pan, and cooked for about 23 minutes at 400. Superb. Thanks Tamara for a great recipe!
