Chicken in Creamy Sun-Dried Tomato Sauce

I made this without the cream of chicken soup (sorry, Campbell's) and added some chicken stock to the wine to make sure there was enough liquid to cook. After cooking, I added some goat cheese and cream for the creaminess. It was pretty tasty that way, but next time I'll drain off some of the liquid first to make a thicker sauce. Because it does turn brown after cooking as some people have said -- doesn't really look like the sauce in the picture -- I think next time I'll also add a can of diced fire-roasted tomatoes with the cream and goat cheese at the end, that would add more veggies and make for a more attractive color.

Yummy Bok Choy Salad

This is really tasty. I added canned drained mandarin oranges, and the overall effect was very similar to Wendy's Asian chicken salad, minus the chicken. (This is a compliment as I think it's a tasty salad, plus you can make enough for at least four people for the cost of one of their salads.) The only caution would be to use the dressing sparingly if you're watching your calories, it has a good bit of sugar in it.

Turkey Patties

I thought this was very good, mine didn't turn out dry. I grilled them on my George Foreman to good effect. I had about 1.3 lbs. of ground turkey and was able to make 8 smallish burgers just perfect for the 8 smallish Weight Watchers buns I had. I was very pleased to be able to make a patty and a bun for 200 calories, not to mention making two nights' dinner for our family of four in one night.

Spicy Sweet Potato Soup

It's really great, thanks. From my CSA I seem to have an endless supply of sweet potatoes (North Carolina, it's kind of our thing), and this is one of my favorite ways to use them.

Chicken Satay with Homemade Peanut Sauce

As I was making this for kids, I backed off the shallots some (4 seemed a lot) and upped the brown sugar just a little in the sauce, and it was great. Stir fry some veggies and noodles, and the leftover sauce will work great for that too.

Simple Baked Apples

Polynesian Coleslaw

(I used a Chinese rice-based cooking wine I've had forever, red onion instead of the chives, and left out the red bell peppers. I also used natural peanut butter which is not as thick and unmanageable.) This was great, and my husband loved it as he loves most savory things. I was actually looking for something with a sweetish tang to it, and when I actually made it realized there wasn't anything sweet in it, but it was still delicious, and I love finding recipes with so few calories and fat in them that are still so tasty. I think you could adapt the ingredients with a little brown sugar and honey for a sweeter dressing.

Frank's Spicy Alabama Onion Beer Chili

I made a less-spicy version of this for my family and it went over very well, even my picky 6 year old ate it. After sauteing the ground beef, I cooked it in the crock pot. THe only thing I will change next time is I will soften the onions a bit up before the crock pot, they stayed kind of crunchy.
