Broccoli Cheese Soup V

I hadn't made this before, but due to all the excellent reviews I thought I'd take a chance and make this for a party tomorrow. Would have just made it tomorrow if I'd have known it would be so quick and easy...also, now I'm seriously worried my hubby and I will eat it ALL before the party, and oh gosh darn it, I'd have to make more...yes, it IS that good!! As other reviewers suggested I went with a 1 lb. block of Velveeta, and 1/2 lb. of shredded sharp cheddar cheese. Also, I shredded a carrot and cooked it with the broccoli for some color contrast. I added fresh ground black pepper to the roux. I worried there might be too much flour in the roux, but the proportions were perfect and it thickened beautifully with 2% milk. Every bit as good as Quizno's...thank you so much for a true keeper!!

Cottage Cheese Chicken Enchiladas

These were the best enchiladas I've ever tasted! So easy to make, too. I cut the prep time way down by cooking the chicken breasts in a crock pot with a can of chicken broth-done and ready to shred when I got home from work. What started out as a way to 'get rid of' some cottage cheese is going to be a regular in my house!

Strawberry Fruit Dip

This is the one...THE one to use at every party. Any fruit will go well with it. Used at my wedding reception and will be used at my daughter's too. Simple and excellent!

Bread Pudding II

This pudding is glorious just as the recipe is written, and has become a staple in my kitchen. I've also made it with many variations: only three eggs, used brown sugar for some of the white sugar, added chopped apples and a sprinkle of nutmeg, made it with stale hamburger buns or even donuts...the possibilities are endless with a great, forgiving recipe like this. My butt may end up getting huge but I will be happy. Thanks for a family favorite!!

Fruit Cobbler

This is amazingly wonderful. I have consumed half of a 13x9 in under 24 hours and am embarrassed to face my husband because of it. I used canned peaches which were on sale...can't imagine how yummy this will be when I make it with fresh summer fruit. I am going to also try it with a bit less sugar if I use canned fruit again.

Famous Pork Chops

Not sure what I expected-hubby and I aren't big pork fans, but I think we will be now! I did add a considerable amount of parmesan cheese. Will probably try baking uncovered for a little more of the time too. Overall, this tasty/tender/simple recipe is a winner that belongs in everyone's dinner rotation.

Chuck's Favorite Mac and Cheese

Oh. Wow...this is some good Mac and Cheese. This recipe is a keeper just like it is!! It just kills me on this site when someone alters multiple ingredients in a recipe (basically making it into a different recipe) and then has the nerve to give it a low rating...don't mind them, just make this mac and cheese and enjoy it. It's good. Really, really good!!!

Cowboy Oatmeal Cookies

Really great fresh from the oven. I believe this is the recipe my grandma used, only she used chocolate chips and added nearly a teaspoon of cinnamon. Delicious!

Classic Peanut Butter Cookies

Very good cookies...as suggested, I used a bit more flour. I froze the dough in balls on a cookie sheet then put them in a ziploc till I was ready to bake them fresh for Christmas. Came out terrific!

Becky's Chicken Salad

This was a hit when I made it for a luncheon at work. Used a bit less mayo and added cayenne as suggested. I know I'm just saying what about twenty of you are thinking here: please, please, PLEASE use the whipping cream. Whip it in a spotlessly clean, chilled bowl with a hand mixer, but don't sweeten it. Cool whip is great for desserts, but this isn't dessert. Terrific recipe!!!

Awesome and Easy Creamy Corn Casserole

This recipe is tried and true...always a winner in my house! Can be made either with or without the eggs, and you can add cheese, bacon, green chiles, jalapenos-or leave them out...doesn't matter, this is always great!!

Awesome Slow Cooker Pot Roast

I have made this recipe at least 50 times and it is always a big hit in my house. My husband loves it!! I have been adding baby carrots, a quartered onion or two, and usually use the Lipton Beefy Onion Soup Mix. I've even made it with roasts that were still frozen solid when I put them in and just cooked it longer...always, always yummy. The easiest and best recipe for a pot roast.
