Old School Mac n' Cheese

I made this exactly as posted here. My biggest problem with this recipe is that it is bland. I believe Mac N Cheese needs to have a sharp cheddar bite, even if it's only like Stouffers. I would try to use all sharp cheddar, maybe add Parmesan or Asiago and lose the milk or most of it but consider using the liquid from the boiled pasta. Lastly, the potato chip topping was good but you'd better eat all of it right out of the oven. If you don't and then put the leftovers covered in the fridge for a day and then reheat. I thought twice about this too when first making this recipe. Have you ever put a potato chip in the refrigerator and eaten it the next day? Not good.

Kale Soup with Portuguese Sausage

I found this dish had a lot of potential but really lacking in flavor. It was quite bland and I figured out why. Why simmer canned beans for 8 hours and then discard the onion and garlic? This caused everything at this point to be way over done (8 hours cooking on LOW). Why add garlic salt when you've added fresh garlic cloves and kosher salt? Increase the garlic cloves and kosher salt. Lastly, by adding the sausage only long enough to smell the sausage fails to infuse it's flavor into the beans. Bottom line, cook the whole thing except for the kale for about 4 to 5 hours. That said, I made it again, added 3 chopped serrano peppers, 1 with seeds, increased the garlic cloves 8 fold and added the kale half way through. To me, the secret here is to infuse all of these wonderful flavors including the sausage into the beans and kale.

Montreal Peppered Steak

I made this marinade exactly as described and marinated some very expensive Tri Tip steaks overnight. I like salty beef but this was nuts! This might have worked if severely diluted with water and a denser piece of meat used.
