Brown Rice Bread

This is a good loaf of bread but the brown rice does need to be fully cooked for our tastes. I served this with curried carrot soup also from this site and it was a good pairing. Thanks Dan.

Buttermilk Oatmeal Muffins

As written these are a 3. I read all the reviews and saw that most of the 5 star ratings had made significant changes. So I made up the batter exactly as written and filled 2 muffin cups. I then added raisins and a teaspoon of vanilla extract to the remaining batter. My daughter who requested I make these tried the plain ones and said they were okay. The ones with the raisins she pronounced delish. I would make these again with the changes. Thankyou for the starting point.

Sausage, Peppers, Onions, and Potato Bake

This looks so good before it even gets to the oven. I halved the recipe, had some smoked sausage to use up so added that to the italian sausage and added in a couple of cloves of garlic. I cooked it for 30 minutes which turned out to be perfect for me, any longer and the onions would have been burnt. My husband gobbled this up in no time. Thanks Beccabo 73.

Garden Stuffed Baked Potatoes

These potatoes really appealed to me but I held off making them because I knew I'd have to make one quite big change. I can't get Ranch dressing here and although an American friend sends me supplies, I had run out. I ended up making these with a reduced fat creamy salad dressing and a couple of shallots instead of the onion. I also used fresh broccoli. We thought this was delicious Hallie and I can't wait to repeat it with the Ranch in the future. Thankyou.

Herbed Chicken Omelet

A great way to use up some leftover roast chicken. I made one change, I didn't have any green onions so I chopped up a shallot and softened it slightly in the butter before adding the egg mixture. Also once the egg was pretty much set I popped it under the broiler for a couple of minutes just to brown it up a little bit, which is something I've always done with omelettes. Thanks for a good recipe.

Donut Muffins

I have been wanting to make these since they were published, but didn't have a mini muffin pan. So when I finally got one I rushed home and made these. I didn't tell my husband or daughter what the recipe was called and my husband immediately said after popping one in his mouth it tastes like a doughnut. My daughter thinks they'd be great dipped into different sweet concoctions. I think these lasted about half an hour in total. A big thankyou Dianne.

Cinnamon Raisin Bread I

I actually scaled this down to make one loaf, thinking my small household could never manage three loaves. Now I wish I'd made all three and intend to do so at the weekend and freeze two of them. The dough is beautiful to work with and the instructions on how to achieve the swirl effect are very clear even when making only one loaf. I found 25 minutes baking time was all it took for one loaf. This is definitely becoming a breakfast favourite with my daughter, Faye thankyou so much.

Cheesy Italian Bread

Very good loaves of bread. I didn't have garlic salt so used garlic powder and upped the salt to 1t. The dough was very sticky so I did end up adding maybe a 1/4 cup more of flour. We had this with minestrone soup and it was wonderful. Thanks for the recipe.

Sweet Potato Minestrone

This smelt so good when cooking. To me minestrone isn't minestrone unless it has pasta in it so I added in some tiny shells about 10 minutes before the end of cooking. Other than that this is a great soup very flavourful. Thankyou Stormywoman.

Whipped Cream Cake II

The cook at the mission where my daughter volunteers gave her a huge container of cream to bring home, saying he wouldn't be able to use it by the expiration date. I thought it would be quite nice if I could make something with it that she could then take back in and after a search came up with this recipe. Thanks to bizzymomma for mentioning in her review how to sub AP flour for cake flour. Just because I was more comfortable doing so I baked at 350 and this rose beautifully. I sandwiched it with raspberry jam and dusted with powdered sugar. The mission slices up all their cake donations and then put them out for people to help themselves. My daughter did manage to get out of one client that this was yummy cake. Thanks for the recipe Sal.

Ratatouille Bake

I ended up straying a little from the original recipe. Purely because it turned out my eggplant was well and truly past it's best. Instead I sliced a few mushrooms and as well as the tinned tomatoes I had one single tomato which I chopped and added in. At the end of simmering I threw in a handful of spinach which wasn't enough to use up on it's own. This was delicious and I promise to make it to the recipe soon Surpriseitswendy thankyou.

Garlic Kale

I usually steam kale or throw it into a stir fry. So this lovely quick and simple recipe made a nice change. "Do I like kale?" my husband asked looking at me suspiciously over the top of his glasses. After eating it cooked this way he had to agree with me that he does. I will be cooking kale this way again just adding a few grindings of black pepper. Thankyou Demara.

Steak 'N' Onion Pie

My husband said this was really good pie. I can only rate the filling as I had some pastry in the freezer and used that for the crust. About 10 minutes before the end of simmering, I took the lid off the pan just to allow the gravy to thicken a little more. It looked like a bit too much filling for my pie plate, so I used individual pie dishes instead. My husband wants me to make double next time. Thankyou.

Greek Orzo Salad

Absolutely loved this and it's so pretty in the bowl. I did go a little lighter on the feta purely because the dish it accompanied also had feta in it. I'd definitely use the full amount otherwise. There were fights over who got the leftovers for their lunch the next day. Thanks so much for sharing Patrice.

Blonde Brownies I

Deliciously gooey. I left out the nuts due to personal preference and just purely out of habit added the chocolate chips into the batter. They took about 30 minutes to cook for me. Thanks for a lovely treat Sue.

Cottage Dill Bread

In my efforts to waste less food, I'm discovering some wonderful recipes. I would never have thought of using cottage cheese in bread dough unless the ingredient search led me to it. I just used the dough cycle on my bread machine and then shaped it into rolls and let rise again for about 45 minutes. I baked in the oven at 350 for 15 minutes. This recipe gave me 6 large rolls for sandwiches which was perfect for my needs. I'll be buying cottage cheese specifically to make these rolls in future. Thanks for the recipe.

Tropical Coffee Cake

I had sour cream and half a can of pineapple to use up so did an ingredient search and came up with this wonderful cake. I did end up being a bit short on the sour cream so used 1/4 cup of yoghurt as well. I don't have a 9x9 pan so using the cake pan conversion chart on this site, I baked it in a loaf pan. This meant it took about 10 minutes extra to cook. My daughter just appeared in the kitchen looking for another slice, so thanks for the wonderful recipe Alisha.

Colette's Smoked Sausage Fritatta

This looks so good when it comes out of the oven. I made a half recipe, threw in half a green pepper that needed using with the onion and sausage. Served this with sauteed tomatoes and mushrooms. My husband was a very happy man, thankyou Colette.

Spinach Enchiladas

I had to make one slight change to these, I thought I had green onions but I was wrong. I did have some shallots that needed using up so went with those instead. Great enchiladas enjoyed by the meat eater as well. Thanks for the recipe SADONIA2.
