Roasted Vegetables

Really easy and ingredients can easily be added or deleted to your liking. I make this all the time with whatever veggies I have on hand. I also change up the herbs and flavored vinegar! This recipe is easy to manipulate to your taste, so give it a try. One thing I have learned is that I prefer to cook my root vegetables for about 20 minutes before adding all my other vegetables. This allows for the same texture throughout and I don't end up with super soft ingredients. I never have left overs!

Enjoyed this recipe! This is gone in a day in our house! I use store-brand versions instead of brand name Stevia powder (also known as PureVia, Truvia and SweetLeaf Sweetener). Any of your favorite sugar substitutes will do.

Libby's® Pumpkin Roll with Cream Cheese Filling

I have wanted to make this for years, but was afraid that it would be a disaster and have to make something else to replace it. My first time was a success. I followed the directions exactly(except for the nuts, as my husband does not like them). It turned out beautiful. I had a tiny bit of sticking with the wax paper, but nothing to get upset about. I put the towel (with the sugar sprinkled on it) on top of the roll and used another pan to turn cake onto. Flipped with no problems. I don't think the whole process of assembling the roll can be rushed. I would think that it would get messy if I tried to do it while each part was still even slightly warm. The recipe is really good the way it is, but next time I will double the filling, because I love cream cheese and prefer the filling to be the dominate ingredient for my taste. Now that I have learned that making a roll/log dessert is not that scary, I am looking forward to trying other flavors!

Mom's Zucchini Bread

Made this exactly like the posted recipe calls for, and it turned out great. It was moist, and tasted very similar to a banana or apple bread. My family and friends loved it and it was gone in a flash. I don't feel you can honestly rate a recipe if you did not follow it exactly. This recipe is a keeper. Sure, I will test changes, like using splenda and peeling the zucchini before grating it, and using half as much nuts. But, I have no doubt that it will turn out just has tasty!

Sarah's Applesauce

Had some extra Rome Beauty apples, so I wanted to try to use them in an easy recipe that I have never tried before. Found this recipe and tried it. Yummy! I never thought about trying to make my own apple sauce. I will never buy store bought again! I made two batches. The original was very good. I like mine sort of chunky, so I was please to have that texture instead of the very fine grain texture of store bought. The second batch, I added some brown sugar and it was just as good, but just added a different flavor. If you like apple sauce, try this! You can adjust this very easily to your taste. My family has gobbled this up with 24 hours of making it.

Annie's Fruit Salsa and Cinnamon Chips

Made this for Super Bowl party. Took the advise of some reviews about the extra juice and sweetnes issue. I used frozen peaches instead raspberries and a different type of apple, mainly because that is what I had on hand. I turned out pretty good. The next weekend I served it with pieces of cinnamon graham crakers. They seem to go well together. Also, I froze the left overs (which I held separate in the fridge for refills) and served it the next weekend over a mixture of cream cheese, butter, sugar, vanilla (sort of like a cream cheese danish filling). It was fabulous. Everyone seemed to like it, however some of the guys wished I had warned them about the sweetness, because they were expecting a traditional type salsa. So, next time I will split a piece of whole fruit and rest it on the side of the bowl. Maybe that will give a clue. I will be making this many times in the future, especially in the summer!
