Roasted Vegetables
Really easy and ingredients can easily be added or deleted to your liking. I make this all the time with whatever veggies I have on hand. I also change up the herbs and flavored vinegar! This recipe is easy to manipulate to your taste, so give it a try. One thing I have learned is that I prefer to cook my root vegetables for about 20 minutes before adding all my other vegetables. This allows for the same texture throughout and I don't end up with super soft ingredients. I never have left overs!

Enjoyed this recipe! This is gone in a day in our house! I use store-brand versions instead of brand name Stevia powder (also known as PureVia, Truvia and SweetLeaf Sweetener). Any of your favorite sugar substitutes will do.

Mom's Zucchini Bread
Made this exactly like the posted recipe calls for, and it turned out great. It was moist, and tasted very similar to a banana or apple bread. My family and friends loved it and it was gone in a flash. I don't feel you can honestly rate a recipe if you did not follow it exactly. This recipe is a keeper. Sure, I will test changes, like using splenda and peeling the zucchini before grating it, and using half as much nuts. But, I have no doubt that it will turn out just has tasty!
