Adobo Chicken with Ginger

Oh yum! Really, really good recipe! I was a little skeptical about the ginger, since the chicken adobo I've always made never called for it, but it brought the dish to a whole new level. Plus, the whole kitchen smelled SO good all night after making it. Do add the chopped sweet onion, though!

Japanese Zucchini and Onions

So easy and delicious! I didn't even use any oil; I just sprayed some cooking spray into my wok for the onions and added a bit of water midway through. Thanks for the great recipe!

Mulligatawny Soup I

Sooo delicious! My family had never tasted anything with curry flavor, and they adored this soup. I used chicken thighs (I already had them) cut into very small cubes, which turned out wonderfully, and brown rather than white rice added along with the chicken broth had a great texture. Throughout the simmering stages, I added water in 1/2 cup increments to get the right consistency. Using a whole apple and throwing in some raisins really made the soup fabulous. Can't wait for leftovers!

Tasty Lentil Tacos

WOW! I just made these without telling my family they were meatless until after dinner, and no one could believe it wasn't ground beef. Granted, we don't have tacos very often... but these were delicious. I had to cook the lentils about 15-20 minutes longer (if you do this, you may need to add more chicken broth afterward), threw in a packet of beef bullion, substituted adobo for cumin, added cilantro and chives, and used whole wheat tortillas. I plan on making these again and again, but next time I'll use hard taco shells and add more chili powder and hot pepper.

Hungarian Mushroom Soup

A new favorite! I love mushrooms, and this was so hearty and creamy. Like others have suggested, I used low sodium soy sauce (my family still said it was a bit too salty), skim milk, and light sour cream, as well as freshly-squeezed lemon juice. At first I thought the amount of dill weed was a little overpowering, but after a few spoonfuls I really liked it the way it was. This one's going in my home recipe book.

Honey Mustard Grilled Chicken

Great recipe! I was surprised with how moist they came out. I used a George Foreman, and the chicken really only needed 2 minutes per side. I marinated the breast halves for a few hours beforehand and really recommend basting quite a bit while grilling (and putting aside some marinade for dipping sauce) for optimal flavor. I'll definitely be making this again soon!

Chewy Coconut Cookies

These are awesome!! I just made them and my family's scarfed down half of them already. I was low on a lot of typical cookie ingredients and was looking for something simple, and these turned out gorgeous (not flat at all, and SO tasty). Alterations to the original recipe: 1/4 cup white sugar and 3/4 packed dark brown sugar instead of 1/2 and 1/2; 1 full tsp. vanilla extract; 1/2 tsp coconut extract; and when adding the flaked coconut, I also added an extra 1/3 of toasted and cooled flaked coconut as well as 1 cup crushed Special K (sounds bizarre, but adds a great little crunch). For me, each batch also needed more like 12-13 minutes for the right softness. Perfection!
