Downeast Maine Pumpkin Bread

Reviewed: Nov. 16, 2013
This recipe is great. I've made it twice now, once following the recipe exactly and the second time substituting applesauce for all but 1 Tbsp. of the oil. Both times the bread came out moist and delicious! The second time I made it, I added a topping of 5 Tbsp. light brown sugar, 1 Tbsp. four, 1 Tbsp. unsalted butter, 1 tsp. ground cinnamon, and a dash of salt. The topping was a nice addition and made for a nicer presentation. I halved the recipe and made it in a large loaf pan (10x6 inch) and it took about an hour and 20 minutes to bake at 350. I covered the loaf with foil at the end to prevent the topping I added from browning too much.

Blueberry Zucchini Bread

Reviewed: Nov. 16, 2013
This is one of the best quick-mix breads I have had! It has a great cinnamon flavor which makes it very festive. I have made this recipe a few times now, once following it precisely, the second substituting applesauce for 3/4 of the oil. Both times the bread came out moist and delicious. I have received so many compliments on this bread.

Uncle Wynn's Bread Machine Rye

Reviewed: Jun. 25, 2011
Although it had the general taste of rye bread, the crumb was very dense.

Savory Slow Cooker Squash and Apple Dish

Reviewed: Dec. 28, 2010
The savory flavors did not come through all that well. If I made it again, I would add some thyme and rosemary to bring them out. Otherwise, I would add some brown sugar or currant jelly to sweeten it up.
