This recipe is great. I've made it twice now, once following the recipe exactly and the second time substituting applesauce for all but 1 Tbsp. of the oil. Both times the bread came out moist and delicious! The second time I made it, I added a topping of 5 Tbsp. light brown sugar, 1 Tbsp. four, 1 Tbsp. unsalted butter, 1 tsp. ground cinnamon, and a dash of salt. The topping was a nice addition and made for a nicer presentation. I halved the recipe and made it in a large loaf pan (10x6 inch) and it took about an hour and 20 minutes to bake at 350. I covered the loaf with foil at the end to prevent the topping I added from browning too much.
