Homemade Ketchup

Reviewed: Apr. 23, 2014
Add me to the list of crazies. I have been making my own BBQ sauce lately so I've been going through quite a bit of catsup. Plus if I make my own catsup then my BBQ sauce is even more mine. My slow cooker was lost in a fire so this time I made it on the stove. I set my timer and stirred it about every 10 minutes. I don't have a garden or any crushed tomatoes. I did have some diced tomatoes but not enough for this recipe. I wanted to make at least this much so I used 2 14.5 oz cans of diced tomatoes ( which I put through my food processor) and 1 6 oz can of tomato paste. As mentioned by another reviewer there's no starting measurement for the cayenne so I started with 1/4 t. I didn't add any more it gives it a nice kick you won't get from Heinz but it may be a little spicy for kids (not burn their mouth spicy but possibly complaint spicy). I found I did not need to strain it I just went through it with my immersion blender (which made a huge mess because I don't have a pot tall enough that isn't way too wide to get good depth for a recipe this size). I poured it into a sterilized squeeze bottle I had saved and it squeezes out just fine. Perfect consistency. Next time I will use less sugar though or perhaps try honey it was a little sweeter than I would prefer definitely edible though. I will be making this again. Lastly I don't know if it was due to doing it on the stove or because I started with different tomato styles but i

Spicy Garlic Lime Chicken

Reviewed: Mar. 16, 2014
This is terrific I have made it twice. The second time I cooked it on the grill. I seasoned the chicken, put it on the grill and used the garlic lime mixture as a basting sauce. We liked it even better that way. Do give it a try if you like to grill.

Pub Chops

Reviewed: Mar. 3, 2014
I really don't get the comments about it not being flavorful but maybe that's because I altered the process a little. It's pretty automatic for me to caramelize my onions for a dish like this so that's what I did first after cooking the bacon. Next I browned the pork chops on one side. I added the garlic when I turned them. Now I made this with some thin pork chops that I happened to have on hand so by that time they were done and I pulled them. the only other change I made was using two pieces of bacon because 1 piece of the bacon I had did not make two tablespoons of grease. If you do something similar you should find it flavorful unless you find anything less flavorful than say buffalo wings bland. My only complaint (which I have often with recipes like this) is that I would've liked it to make a little more sauce. Not everyone likes things as saucy as I I'm sure. No problem next time I will double all the sauce ingredients! Thanks for sharing this we really enjoyed it. FYI it goes great with a beer.

Original Nestle® Toll House® Chocolate Chip Cookies

Reviewed: Jan. 16, 2014
I've made these cookies for years and my grandmother before me. These are perfect if you follow the recipe correctly providing for differences in (oven thermostats and altitude of course.) If you want to try some of the additions and substitutions there's nothing wrong with that of course. That said these turn perfect as is. I do chill the dough before baking and keep in fridge in between batches. Other than that the only thing I ever change is the nuts. Sometimes I feel like some nuts sometimes I don't.

Chewy Peanut Butter Chocolate Chip Cookies

Reviewed: Jan. 16, 2014
Ok I just made these tonight. I used chocolate chips instead of chocolate chunks. I didn't measure the amount of chips I just eyeballed it. I also substituted thick sugar water for the corn syrup because I didn't have any. Other than that the only thing I changed was the cookie size and bake time. I used my Tablespoon measuring spoon and made rounded scoops. It made almost 3 dozen. It might have made the full three dozen but I have a cookie dough addiction. I also only baked them for 11 minutes. the 1st batch I did for 9 but I had to put them back in. even after they were still not quite right they wanted to fall apart. the other two I put in for 11 minutes and they were perfect. They were not dry at all and I did not reduce the flour a bit. I do recommenced chilling the dough after mixing for less messy scooping though. I also kept in the fridge while baking previous batches. The kids love them... thanks for posting. Oh yes someone mentioned the type of peanut butter might make a difference in how they turn out... I don't know if it does or not but I use Skippy natural creamy.

Fish Tacos

Reviewed: Aug. 28, 2013
I was really not expecting to like this but I figured at worst I could have fried fish and lose the rest so I tried it. I really loved it the batter turned out perfect and was very easy to make. On the sauce I found that it's a little spicier than I would like and next time I will cut the cayenne back by about 1/4. Possibly because it was so spicy there was way more sauce than I needed. Not a problem I froze the rest and used for the next batch. It actually tamed it down a little bit. so if you freeze leftover sauce expect it to be less spicy when you thaw it. Other then that it was just like it was fresh.

Classic Holiday Egg Nog

Reviewed: Dec. 6, 2012
This is a terrific and simple base recipe! A big thanks to the poster. I made eggnog a long time ago from another recipe and hated it. I went back to the store bought stuff until today. It's Particularly nice if you don't want to make a lot. I did modify it some. I used 1/2 whipping cream and 1/2 milk because I wanted it to be creamy. I added cloves and nutmeg to taste (for me that ended up being 1 1/2 t nutmeg and 1 t cloves. I also increased the vanilla. I increase the vanilla on any recipe I try that contains it though.

Crazy Cake

Reviewed: Jul. 18, 2012
My grandmother made this cake for years and it was the 2nd (the 1st was a pineapple upside down cake I made in home ec class) cake I ever made from scratch. I used to take it to the church socials. everyone loves it because it's so moist. I never frost it. It doesn't need it.

Rich and Creamy Beef Stroganoff

Reviewed: May 3, 2012
This was THE best stroganoff I've ever had and I didn't even make it right. 1st I made it with some ground turkey I had on hand. It wasn't saucy enough and I was rushed so I just added broth until I got it the consistency I wanted. Next time will add more of the other sauce elements also. I also used red wine vinegar as I had no wine on hand, and chicken broth because it was what I had and I ended up forgetting to add the pepper flakes (I'll add them next time). The vinegar, mustard and Worcestershire melded to a very nice distinct flavor. I will definitely be making this one again.

Chicken Cordon Bleu I

Reviewed: Mar. 22, 2011
This is among the best recipes I've tried off this site and that says alot! I used crushed croutons (garlic and butter) I followed a reviewers advice and dipped the chicken in egg before laying it on the croutons, topping it with ham and cheese and then rolling. Hubby loved it. I've been wanting to make this for a long time but thought I'd have to butterfly the chicken and I'm not that handy with knives. This recipe made it easy. I also tried the sauce another reviewer mentioned. I didn't really like it. It didn't really have flavor at first and then the lemon hit me. I think it's a good base but use less llemon maybe a teaspoon or even 1/2 teaspoon and maybe add some chicken broth or buillion. A chicken ramen flavor packet might work nice for that.

Chicken, Feta Cheese, and Sun-Dried Tomato Wraps

Reviewed: Sep. 11, 2009
I tried this for a light healthy dinner. I haven't tried sun dried tomatoes yet and they were a bit pricey so I used fresh. I also added sliced ripe olives. I found whole wheat tortillas are going to take some getting used to other than that I loved it but hubby doesn't like the feta so next time I'll try a more Americanized cheese perhaps mozzarella or asiago. Take away the tortillas and you'll have an awesome salad. Very good recipe.
