Spicy Sweet Potatoes

Reviewed: Apr. 1, 2009
These were so delicious! The only complaint was taking time to peel and chop the sweet potato during the workweek. I omitted the cayenne and added regular pepper. The chili pepper gave it a nice flavor. Also used splenda brown sugar mix and an omega3 mix oil. Just keep and eye on them when cooking. Mine only took 30 minutes and were perfect.

Slow Cooker London Broil

Reviewed: Jan. 15, 2009
This was really really good. The only negative (and why I gave it 4 stars was that it really smelled up the house....I think next time I will add some red potatoes and veggies to make a great pot roast dinner.

Broccoli Cornbread

Reviewed: Nov. 5, 2008
2 out of 3 family members really loved this. My husband who hates cooked broccoli said I messed up perfectly good cornbread...I put the chopped broccoli in the food processor to make it less noticeable and I think it tastes a lot better that way instead of getting a mouthful of broccoli. I did make it a little healthier by using oat flour instead of all purpose, southwestern eggbeaters instead of eggs, omega oil instead of butter. For more flavor I also added 4 oz can of mild green chilis for a little more spice. It was very moist and was just as good then next day! I will definately make this again

Sweet, Sticky and Spicy Chicken

Reviewed: Mar. 12, 2008
This was a great healthy alternative to delivery Chinese. I diced up the chicken for bite size pieces and I added toasted sesame seeds to the sauce and when served. The only thing is a bit too hot for my taste. May lessen or even omit hot sauce.Other that that tasted like sesame chicken from our favorite chinese delivery. Will definitely try again soon. May even add some stir fry vegetables.

Chicken and Rice Amandine

Reviewed: Mar. 10, 2008
I loved this. It was so easy. The only changes I made was to cut the chicken into cubes so we had bite size pieces. I went a little healther and used butter flavored spray instead of butter and fat free sour cream. Was great for 2 days of leftovers for a family of 2.

Wild Rice Chicken Bake

Very yummy and easy. I used 1 cup frozen mixed vegetables instead of carrots and peas. I also used thin sliced chicken breast and have to be careful to not over cook.

Taco Soup VI

Reviewed: Jan. 24, 2008
One of our new favorites. Only change I made was to use mexicorn instead of tomatoes (not a favorite in our house) and used low sodium V8 and only 1 package of reduced sodium taco seasoning. Top with a little mexicheese and some cornbread on the side.
