Amish Breakfast Casserole

Loved it! I used all cheddar because that's what I had on hand. I'm anxious to try it with swiss. I was worried that since it doesn't say to saute onions that they might not be soft enough for me. To make it quick I just omitted them.

Brown Rice and Black Bean Casserole

I can't give this a fair rating. It would probably be good (my husband enjoyed it), but I tried a shortcut. I thought I could not saute the onions and zucchini to save some time. I thought they'd cook in the oven, but they didn't cook enough. The onions especially were too raw/strong. I will be trying this again...following the directions next time! I just thought I'd share my experience so you won't make the same "dumb" mistake.

Blueberry Zucchini Bread

Turned out great. Used 2 regular sized loaf pans, baked for 70 minutes, used 2 3/4 Whole Wheat Pastry Flour, 1/4 c ground flaxseed, applesauce instead of oil, 1 1/4 white sugar, 1/4 c brown sugar. Will make again!

Grilled Peanut Chicken

It wasn't terrible, but I won't be making it again. I've never had peanut chicken before so maybe it was just an unfamiliar taste for me. My husband enjoyed it more than I did.

Kathy's Easy Chile Chicken and Rice

I took Shiloh's advice and made a broth/milk/flour sauce instead of the soup. I also used brown rice instead of white rice to up the nutritional value. I had to cook it about 1 1/2 hours (covered) and the rice was still a bit under done. Next time I will add more broth and plan for added cooking time. I will be making it again. My husband and I enjoyed it and look forward to the leftovers.

Maple Syrup Korean Teriyaki Chicken

I don't know if Korean Teriyaki is supposed to be this spicy, but I was hoping for a sweet teriyaki sauce so I was disappointed. I mostly tasted the pepper. I might make it without the pepper or cut it way back. It was edible, but there's better teriyaki sauces out there.

Quick and Easy Green Chile Chicken Enchilada Casserole

My casserole came our really mushy. It tasted good, I just didn't like the texture. I only used 2/3 of the 28 oz sauce. I didn't char the tortillas and I did make it an hour early and kept it in the fridge before cooking it. Maybe that was the problem. I might try tis again with less sauce. Leftovers-I wrapped them in a warm whole wheat tortilla. It was really good!
